My DH hates vego food too (I only used to eat meat twice a week before we lived together so it was tricky to find some middle ground!) I find curries and other really flavoursome foods are the best way to disguise the lack of meat, now he happily eats whatever I shove in front of him.
Green curry with potatoes, baby corn, zucchini, red capsicum and eggplant (and tofu if you're partial to that?)
Spinach and ricotta triangles (google luke mangan's recipe, it's a little different but very yum!)
Baby spinach, pinenut, sultana and creamy pesto fettuccine
Chickpea and cauliflower soup
Pretty much any curry...you can sub meat for pumpkin and potato or pulses, for stodge and then any other vegies you like

Here you go Kate. This is a basic recipe. I got the idea from Rouge (cos she is a genius) and I just use whatever I've got on hand.
Ingredients
500 grams cauliflower. (I use about 1/2 head for 2 or a full head for all of us)
1 tablespoon olive oil.
2 cloves garlic, crushed
100 g chopped onion
3 rashers Bacon
1 tablespoon soy sauce
2 free range eggs (for egg roll)
Method:
1. Grate the cauliflower, including the core.
2. Break the eggs scramble, fry in pan and form into egg roll, cut into small pieces and set aside.
3. Heat the olive oil in a wok, add garlic, onion and Bacon. Fry until golden colour.
4. Add the cauliflower & soy sauce (add whatever greens you want also)
5. Stir Fry for about 5 - 8 minutes.
6. Add in egg
Except you would leave out the bacon for a meat free option
My DP eats all vegetarian at home because I don't cook meat in the house. So he only eats it when he is out or during the day if he buys lunch - he doesn't seem to miss it at all. Some of our faves are

- red lentil and tomato soup
- eggplant curry
- potato and chickpea curry
- Stir fry noodles or rice
- Moroccan vegetable tagine with cous cous
- Baked potatoes
- Cheesy pasta bake
- Canneloni
- Pasta with kidney bean sauce
- Pumpkin soup with cannelini beans
