    Fish Recipes

    Hellpppppp.

    Ok so I know we should be eating more fish , so I desperately need all your yummy fish recipe ideas...salmon patties ...fish currys ..anything!

    i just do plain grilled fish, but i do it with my own special flour mix. i make a mixture of a tiny bit of fresh lemon rind - cut up as tiny as possible, fresh parsley, salt, pepper, bit of all spice and plain flour!! when you mix it up, just do as much as you liek to flavour the flour.. and its all in proportion to how much fish your cooking!

    then fry in butter til its brown and crispy!! the lemon rind makes it lemony, and i usually squeese lemon juice over whilst cooking aswell!!!! not fatty and very yummy!!!!!!

    hope you like it!! my hubby loves it! and its hard to ge thim to eat fresh fillets!

    We had this for dinner tonight, they were easy and yummo!

    Salmon patties.

    Ingredients (serves 4)
    500g potatoes, peeled, chopped
    415g can red salmon.
    2 tbs drained capers, finely chopped
    2 shallots, finely chopped (i used an onion)
    1 egg, lightly whisked
    1/3 cup (30g) breadcrumbs
    Salt & freshly ground pepper
    2 tbs olive oil
    Purchased dry breadcrumbs, extra, to coat

    Lemon wedges, to serve
    2 tbs Neil Perry aioli dressing- (i served with sweet chilli instead)


    Method
    Cook the potatoes in a saucepan of boiling water until tender. Drain well. Mash. Cool slightly.
    Place the mashed potato, salmon, capers, shallots, egg and breadcrumbs in a bowl. Use clean hands to mix until well combined. Season well with salt and pepper. Divide the mixture into 8 patties. Put on a plate and refrigerate for 30 minutes.
    Heat the oil in a large non-stick frying pan over a medium heat. Coat the patties in a thin layer of extra breadcrumbs. Add patties to pan and cook for 2-3 minutes each side or until golden brown.
    Serve the salmon cakes with a salad, drizzle with Aoili (or sweet chilli)
