What is the recipe for? Is it for bread? Or a Cake? Thats how I'd look at it. Anchor make flours specific to different recipes. And yes Hard flour is often high protein flour, like bread/pizza flour I have many many flours LOL and I will use my Anchor Bread/Pizza flour as hard flour.
