Food inspiration please - when PUPO and "on the road"

So DH and I are going away to gippsland for the long weekend - we are leaving at about five tomorrow evening.... And as of this morning I am PUPO with a cute little 4 cell embie

Thing is, I would like to try and eat healthy - which every other cycle I have found difficult when out and about and travelling....

We are eating in restaurants most evenings, so that's not an issue... Ill just choose something appropriate... But.... I'm looking for suggestions....

What do you guys suggest for lunches while out and about (if having to buy) ?

What about tomorrow night for dinner? I'm looking for suggestions of things I could pack that are tasty to eat, but don't need refrigeration and still feel like you are eating something yummy....

Ill be home all day tomorrow and am happy to bake something.....

So hit me with you best ideas for yummy PUPO/pregnancy travel foods

PS we can take a cooler bag with some ice bricks for tomorrow night....

Wouldnt mind some snack ideas for Friday/Saturday... Sweet and savoury... That are not fruit or carrot sticks... And are tasty

    Very exciting!!

Couple of recipes for you. Biscuits and muffins and cupcakes are also good to bake and take. Salted nuts and dried fruit are about the only other good thing I can think of to buy.

    Banana Bread (from Elana's Pantry)
    Paleo Banana Bread

    • 3 bananas (about 1 ½ cups) mashed
    • 3 eggs
    • 1 tablespoon vanilla extract
    • 1 tablespoon honey
    • ¼ cup coconut oil or butter
    • 2 cups almond flour
    • ½ teaspoon sea salt
    • 1 teaspoon baking soda/bicarb

    1. Place bananas, eggs, vanilla, honey and oil/butter in a food processor
    2. Pulse ingredients together
    3. Pulse in almond flour, salt and baking soda
    4. Scoop batter into a greased 7.5 x 3.5 loaf pan
    5. Bake at 350° for 55-65 minutes
    6. Remove from oven and allow to cool

Homemade Fudge (from Our Nourishing Roots)
    Chocolate Peppermint Coconut Fudge

1/2 cup coconut butter (aka coconut spread/coconut manna)
    1/2 cup coconut oil
    1/2 cup cocoa powder
    1/4 cup thick, raw honey
    2 teaspoons peppermint extract
    1 teaspoon vanilla extract
    1 cup unsweetened, shredded coconut

    1. In a food processor, combine coconut butter, coconut oil, cocoa powder, honey, peppermint, and vanilla until very well-combined. Add shredded coconut and pulse until combined.
    2. Spread mixture into a square glass pan, smoothing the top evenly. Refrigerate for 30 minutes. Remove the pan, and cut into squares (if it’s too stiff, then let sit 10 minutes at room temperature and try again). Using a small spatula, loosen the individual squares. Store in the refrigerator in a container. To serve, remove from the fridge and let the chill come off for about 20 minutes.

Ummm... little quiches? Salad wraps? Home-made hummus, pita chips and cheese?

Clearly you have not been stalking

yes I kept this cycle a secret, then got all excited when they found 14 Eggies

apart from deep fried food and pizza it's pretty hard to think about safe food when travelling!!

Going to bake some kind of muffins today I think.... Don't like bananas though meow.... Sorry! Was wondering whether they could be replaced with anything in your recipe?? Slice sounds delish!

Pumpkin or zucchini breads are also nice. Search for coconut flour muffins and there are good ones around. We like carrot cake muffins.
