Very exciting!!

Couple of recipes for you. Biscuits and muffins and cupcakes are also good to bake and take. Salted nuts and dried fruit are about the only other good thing I can think of to buy.

Banana Bread (from Elana's Pantry)
Paleo Banana Bread


  • 3 bananas (about 1 ½ cups) mashed
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon honey
  • ¼ cup coconut oil or butter
  • 2 cups almond flour
  • ½ teaspoon sea salt
  • 1 teaspoon baking soda/bicarb


  1. Place bananas, eggs, vanilla, honey and oil/butter in a food processor
  2. Pulse ingredients together
  3. Pulse in almond flour, salt and baking soda
  4. Scoop batter into a greased 7.5 x 3.5 loaf pan
  5. Bake at 350° for 55-65 minutes
  6. Remove from oven and allow to cool

Homemade Fudge (from Our Nourishing Roots)
Chocolate Peppermint Coconut Fudge

1/2 cup coconut butter (aka coconut spread/coconut manna)
1/2 cup coconut oil
1/2 cup cocoa powder
1/4 cup thick, raw honey
2 teaspoons peppermint extract
1 teaspoon vanilla extract
1 cup unsweetened, shredded coconut


  1. In a food processor, combine coconut butter, coconut oil, cocoa powder, honey, peppermint, and vanilla until very well-combined. Add shredded coconut and pulse until combined.
  2. Spread mixture into a square glass pan, smoothing the top evenly. Refrigerate for 30 minutes. Remove the pan, and cut into squares (if it’s too stiff, then let sit 10 minutes at room temperature and try again). Using a small spatula, loosen the individual squares. Store in the refrigerator in a container. To serve, remove from the fridge and let the chill come off for about 20 minutes.
