Well I was just about to start a SC Minestrone, I chopped the onions and discovered I was out out stock (DERRR).

I was all ready to get chopping - can I still prep everything and store it until tomorrow morning? I know the onion will be fine, I think potatoes will be ok under water..

What about carrot, celery, zucchini? Can that be chopped in advance?
