Ok, so over the last week I seem to have lost my cooking enthusiasm. So here is where you can help
What is one of your favourite recipes, just simple, no ingredients that are hard to get (I don't have much of a selection ). Try not to post one that somebody has already posted. Tonight, I'm going to try and plan my next week of meals and try some of your recipes.
I'll start it off by sharing my lates Thai Green Chicken Curry Recipe.
Ingredients:
1 tbsp oil
1 onion, finely chopped
2 tbsp Thai green curry paste
1 cup coconut milk (approximately)
1/2 cup water
500g chicken thigh or breast fillets, cut into bite sized pieces
100g green beans or zucchini, cut into pieces
2 Kaffir lime leaves
1 tbsp fish sauce
1 tbsp lime juice
2 tsp brown sugar
1/2 - 1 cup fresh coriander leaves, roughly chopped
Method:
1. Heat oil in a wok or large saucepan.
2. Add onion and curry paste and cook for 1-2 minutes, stirring constantly
3. Add coconut milk and water, bring to the boil.
4. Add chicken pieces, beans and lime leaves, stir to combine. If chicken is not covered by liquid add more coconut milk.
5. Simmer uncovered for 15-20 mins or until chicken is tender.
6. Add fish sauce, lime juice and brown sugar, stir to combine.
Sprinkle with fresh coriander leaves just before serving. Serve with steamed rice.
oh - I have to dig it out. It's a moroccan lamb dish that you cook mostly in the oven, I think... But it's brilliant.
The recipe is in the box of cook books & magazine in the shed, so you'll have to give me a couple of days to dig it out.
Otherwise, a subscription to Delicious. Magazine is all you need to return your mojo. It's hands down, the BEST thing DH has ever bought me. I vowed to cook 3 things (and they can't all be desserts!) out of each mag, that way we get to try new things. And the meals are usually not too complex, and generally have easy-to-find ingredients. Hey - If I can cook the recipes in Kalgoorlie where you're lucky to find cinnamon bark scrolls, you can cook them ANYWHERE!!
Apricot Chicken (dinner tonight)
1 tin apricot nectar
1 tin pie apricots
1 onion diced
enough chicken drumsticks for your family
1 packet french onion soup
throw it all in the oven for approx 30mins )or you can cheat like I have today and put it all in the slower cooker.
Serve with Mash potato.
YUM YUM YUM!
Chinese Cabbage Salad
1/2 chinese cabbage finely sliced
1 packet orient fried noodles
shallots
BBQ chicken torn up
Slivered almonds.
Follow directions on the back of the pack for dressing.. I'll post the dressing tomorrow when I go shopping for more noodles for here. Can't remember that bit off the top of my head

Oh dear... you must be living somewhere really small! Actually, the MIL is staying with us & she's from a tiny town in Tassie. She thinks our supermarket is brilliant! But after being to hers, I can see why.
