LOL, all I did was mix together:
4 cloves of crushed garlic, 4 tablespoons of butter, almost one lemon, and 2 tablespoons of salt.
and I rubbed that all over the chicken.
Then I used the rest of the lemon, cut it into wedges, and put that in the bum with 2 more cloves of garlic (we like garlic). That garlic was only chopped roughly. Not a real 'stuffing' just something to flavour.
I put it in the oven on 150-160 degrees for the first 30-0 minutes (as we had to go out to SILs place and pick up her car), then I put it on 180-200 degrees for the rest of the time... about 1 hour, 40 minutes. The chicken was actually alost 2.5kg, and that seemed to be the PERFECT time for it, it was fully cooked by still very moist.
I added potatos, onion, and sweet potato to the pan about an hour into cooking, and turned them two or three times, every 15-20 minutes.
It was pretty much just trial and error though. Give it a turn if its looking to brown, I turned the heat up at the end to colour the skin a bit more. I don't know if you would need to have the heat lower at the beginning, I just did that because we weren't going to be at home.
