Well I've been going through a make it yourself sauce fetish... last week it was hollandaise this week it was mayonnaise... So here it is a VERY easy recipe for home made mayonnaise. From the lifestyle food channel!

1 Egg Yolk (At Room Temperature)
Pinch of Salt
? teaspoon Dijon Mustard
1 teaspoon White Wine Tarragon Vinegar
1 cup Grapeseed Oil (Or Vegetable, Canola, Or Peanut)
Lemon Juice (To Taste)
Pinch of White Pepper
Whisk together the egg yolk, salt, mustard, and vinegar in a roomy bowl.
To add the oil, start whisking the yolk mixture and let the oil fall from the spout, drop by drop, until you have achieved a thick, velvety mayonnaise.
Taste it.
Add lemon juice, salt, and pepper to taste.

I make mine it my Tupperware Quick Chef But you can easily whisk and it takes less than 5 minutes And it doesn't cost upwards of $5 per jar (for the good US stuff )

To store, put in a jar or air tight container and it will keep for up to a week. Obviously not good for pregnant woman, but for those not pregnant don't worry about the "raw" egg as the lemon juice and vinegar cook it anyway

I used it tonight in a yummy baby spinach, cherry tomatoes and french onion salad DELISH!
