    Peanut Butter Fingers

    Mashed potato
    grated carrot
    grated zucchini
    chopped onion
    (celery/leek/pumpkin....)

    peanut butter (you can omit or use cheese or salsa or sweetchilli sauce or BBQ sauce or....)

    beaten egg in bowl

    bread crumbs


    ---------------------------
    Combine all the vegies with your choice of sauce/herbs/peanut butter.

    Roll into 'fingers' (fish finger size)

    If you have time, cool them in fridge for awhile (will help make them harder)

    Roll the fingers in the beaten egg

    Roll the fingers in bread crumbs to coat

    Cook the fingers in oil in a frypan


    These can also be frozen, and reheated in the oven.

    i think this idea came from 4 ingredients?

    You cut up bite sized pieces of chicken, coat them in mayonnaise, then coat in crumbs and bake.

    The taste is sooooooooooo delicious!!!

    even homemade chicken nuggets, using mince (i have one using chunks of chicken) would be good, cause i could adapt it abit

    I make the vege fingers with 1 cup mashed potato, grated carrot, grated zucchini and 1/2 cup corn. I mix them all together with an egg to bind them and then roll them into balls, dip in crushed up corn flakes and baked in the oven for 10 minutes or so.
