Well today i had a go at the Nigella Lawson's honeycomb recipe it seemed easy enough to make but sadly it didn't set, was gooey (i even tried to harden it in the fridge but to no avail)
Don't know what i did wrong
Does anyone know a honeycomb recipe that is easy to make & more to the point easily sets hard ??
Kristy ... LOL, i don't know which of us had it worse as the flavour of mine tasted nice (not mouth full of bi-carb) BUT at least yours was crunchy on the inside , ... as mine wasn't !!
Ingredients:
6 tablespoons white sugar
2 tablespoons golden syrup
2 teaspoons water
1 teaspoon bicarbonate of soda
Method:
Place sugar, golden syrup and water in a heavy saucepan and stir over a gentle heat until the sugar is dissolved. Bring to the boil and then boil for seven minutes, remove from the heat and quickly add the bicarbonate of soda which will at this point make the mixture will froth dramatically. Stir quickly and pour into a greased 28x18cm lamington tin.
After 20 minutes and when the mixture is cool, mark into pieces. When cold, break into pieces and wrap in cellophane ready for use.
I've never made this before so not sure how it will go. I have another recipe that uses corn syrup too.
Smiles - i just tried to make that one, it needs a few adjustments to the recipe
No need to put it in a tin, just pour it onto greeseproof paper (like Nigella) - it doesnt make a huge amount.
Dont boil it for 7 mins, it will burn. I set a timer and mine bubbled for 6 mins on med heat before i smelt it had gone too far, i still made it and it set well but tastes burnt. Maybe do a rapid simmer for 5 mins ????
That's maybe what happened with our other recipe, it wasnt cooked for long enough, that why it didnt set properly.

I am thinking about making it tonight with my DD for over the weekend. I will try the rapid simmer for 5 or so mins and let you know how it goes
OMG MrsB26 ... you & i must have made it about the same time today & i had the exact same results as you ... Didn't make as much as i thought it would & yes did have a burnt taste ... But it certainly set well & yes as you mentioned i too will have it on less than 6mins next time on the stove. I greased a lamington slice tin & placed baking paper on it (didn't want to have marg/butter stuck to the honeycomb), much better idea though no need for a tin as MrsB26 mentioned ... There was probably not even enough to cover a 1/4 of the slice tin just to give an idea if someone else is going to make it. The texture of this honeycomb i absolutely LOVED it
Thanks again LISA ... it's by far better than the Nigella recipe (her one sux) ... Your one LISA will taste better with only a couple of adjustments & it is so EASY to make (easier than Nigella's recipe) !!
Dont simmer on low heat for 5 mins, it needs longer (trust me i tried it again!) and it was too soft.
I think the trick is to get it to the 'hard crack' stage. If you think its ready, take it off the heat and drop a little bit into a glass of water - if it goes rock hard then its ready to add the bi-carb, if it sets soft then its not ready and needs more cooking so put it back on.
I ran out of syrup so when i go to the shops i'll try again - i'm determined to make this stuff whether it kills me or not - maybe 4th time lucky??? lol
Well, last night i made two seperate batches ... yeh, me too MrsB26 so determined to make it ... So, i rapid simmered (found the meaning of it on a recipe forum, LOL) for about 5 or maybe just under 6mins ... and took it on & off the jet if the bubbles looked like they were rolling (if that makes sense ) ... and one batch i finished i made it standing high but the inside was a bit 'too' soft & the inside had a bit of a bi-carb taste to it ... BUT the batch i did which i flattened a bit (about 1/2 to 3/4 of a cm) it tasted YUMMY ... Just like the real deal honeycomb from the shop ... only i just wish it could be the same texture & taste being about an inch high
So, NO burning taste with 'either' batch !!!
I popped into a tupperware container lined with foil & 24 hours later it didn't go soft but stayed exactly the same, not too hard but with some crunch
