Ingredients:
6 tablespoons white sugar
2 tablespoons golden syrup
2 teaspoons water
1 teaspoon bicarbonate of soda
Method:
Place sugar, golden syrup and water in a heavy saucepan and stir over a gentle heat until the sugar is dissolved. Bring to the boil and then boil for seven minutes, remove from the heat and quickly add the bicarbonate of soda which will at this point make the mixture will froth dramatically. Stir quickly and pour into a greased 28x18cm lamington tin.
After 20 minutes and when the mixture is cool, mark into pieces. When cold, break into pieces and wrap in cellophane ready for use.
I've never made this before so not sure how it will go. I have another recipe that uses corn syrup too.
