My boys love meatballs.
I find that some breadcrumbs stops them from being dry.
I don't really follow a recipe.
Just beef, egg, garlic, salt, pepper, herbs and breadcrumbs mushed up together. If I have veges that I can grate into them I add them (carrot, onion, zucchini are all good).
I prefer the taste if the meatballs are browned on the outside before cooking but you could skip that. I cook them in a basic tomato sauce. Tomato, onion, garlic, herbs, grated veges optional. Either in the slow cooker or the oven.
Serve them with greek yogurt over the top.
How about chilli con carne with rice? It doesn't have to be too chilli.
