Looking for idea's of things to cook, that can be served cold & still taste good.

Not just for us to keep in the fridge, but that I cann make to put in SIL's fridge for the workers. All cooking is done for them the day before, then its taken out in an esky. There is one hot food dish in a slow cooker (thats pretty easy to come up with), but the rest are cold.

Things that are pretty simple, basic & yummy would be great.
