    and its the night before food shopping day! HELP!

    ok. my plan was to make a sheppards pie for dinner tonight, went to the freezer to start getting it organised and the meat fairy seems to have stolen my mince. Sooooo.............

    i need something to cook for tea. Keeping in mind, its the night before i go food shopping so there isnt a great deal of fresh veg etc in the fridge.

    Meat wise, i have..... heaps of chicken breast (skinless), marinated steak, roast lamb, chops..

    so im kinda looking for something i can do with the chicken. Also something that DP and DD can eat ( tho if she cant, i have back ups).

    So please help! we sit down to eat in about 2 hours!!!

    how about home made chicken snitzel. Flatten your chicken and crumb it. It's yummy. Much better than the ones you buy. If you have it add some parmasen cheese to your crumbs with some salt and pepper.

    with chicken breast I either make stir-fry or pop them in the oven with tomato paste, mushroom, cheese & garlic

    got tinned tomatoes?

    chicken
    tinned tomatoes
    onion
    whatever vegies you have, if any
    herbs
    spices
    stock

    chuck it all in the oven

    Stir fry chicken
    Chicken parma (crumb them and put tomatoe paste or salsa on them and then cheese)
    curry chicken
    casserole (tinned tomatoes, onion, etc)

    Roast chicken breasts

    garlic butter stuffed in breast or rolled up with bacon around outside and garlic butter in middle

    I cut chicken breast in half, not all the way! Put olives, cheese in the middle, then rap the breast in bacon and bake in the oven. On the side have vegies and gems/chips.
    You dont have to rap them in bacon if you have non.
    What ever deli meat you have can go inside with cheese etc Yummy! Im doing them tonight

    my fav chiccy breast recipe

    Cut sheets of puff pastry into square quarters.
    Place a piece of chicken diagnally across each quarter (1/2 kg usually makes about 8) place a cmall cube of butter on top and a little garlic (or a lot - i do lol!) on top of that.

    Bring the corners of the puff pastry diagnally over the top of the other side to make a parcel and brush with butter

    Put in the oven for 40 min at 180C

    mmmm delicious!!

    same principle as PP but instead of garlic and butter, add some spag sauce (not much), bacon/ham and cheese. yummo

    chooken fried rice
    stuufed chicken breast (with cheese, bacon/ham, onion. can leave as is or coat with seasoned bread crumbs
    chicken bolognaise (can be made into a pasta bake)
    chicken vegie bake in creamy cheese sauce

    Season the chicken and brown both sides in a pan. Remove them from the pan and put aside. In the same pan heat some oil and fry off some diced onion and garlic and thyme, add 2 cups of uncooked rice, a tin of diced tomatoes (or 2 or 3 chopped tomatoes if you don't have tinned), roughly 3 cups of chicken stock, parsley and basil. Bring to boil. Pour it all into a baking dish and place the chicken pieces on top of the rice mixture. Bake in the oven for about 30 minutes or so at 180ish until the chicken is cooked through and the rice is soft....YUM.

    Some easy and quickies...
    chicken kebabs ( chincken breast, onion, capsicum 2 tsp cajun seasoning)
    honey mustard chicken breasts ( 4 chicken breast, 1/4 cup honey, 2 tbs dijon mustard.. pound chicken breasts, mix honey and mustard, spread over chicken. leave some for basting, grill 15 to 20 mins, turning and basting until done)
    zingy chicken ( 4 chicken breasts, 1 egg beaten, 1/4 cup soy sauce, 1 cup crushed cornflakes.. cut chicken into thick strips, combine egg and soy sauce and dip chicken into it. Coat with cornflakes place on to baking sheet and cook at 180 for 30 to 40 mins)
    and maybe just chips or whatever you have on the side..
