Sure do! The basic thing with meatballs is to use a basic recipe and expand on it.

My basic recipe is:

500gm mince meat/chicken etc
1 egg
1/4-1/2 cup breadcrumbs or alternative to...
salt & pepper

Anything else is flavouring or added for nutritional benefit....

Italian Meatballs

500gm mince red meat
1 clove garlic crushed
1 small handful basil chopped
1 small handful oregano chopped
1 egg
1/4 cup linseeds ground (I use this as an alternative to breadcrumbs all the time... for the omega 3)
1 carrot grated or zucchini

Mix together and pop into large pan, brown on all sides and then add to a red sauce.

Meatball red sauce:
1 large jar passata
1 clove garlic crushed
salt & pepper
oregano
basil

Simmer in sauce for 30-40 minutes


Thai Turkey Meatballs

500gm turkey mince
1 clove garlic
1 egg
1/4 cup lindseeds ground (you can use wheat bran or breadcrumbs)
1 carrot grated
1 zucchini grated
1 tbsp soy sauce
1 tbsp sweet chilli sauce
1 handful coriander or 2 tsp dried coriander
1 tsp grated ginger

I mix it all up together and pop it in the fridge for 30 minutes and then roll into balls and put in the fry pan with a tiny amount of oil, brown around and then pop into the oven on 180 for 25 minutes.
