I just thought of something else - burritoes! I make mine by browning 500g mince beef and an onion, add taco seasoning mix and cook for about a minute. I add a tin of tomatoes, a tin of kidney beans and a tin of corn and simmer for about 5 mins or until the mince is cooked and the sauce has thickened.

Then I serve on wholemeal tortillas with mashed avacado, tomato, lettuce, cheese, sweet chilli sauce and a small bit of sour cream. I give it to my kids as a wrap. DS is not overly successful with it, but he is learning. I usually just give him a fork after he has had a go at the wrap and he picked the bits out of it.

I use heart smart mince because it is lower in fat and I find this recipe usually makes enough for 2 meals of burrito mince so I freeze half of it for another time.
