    Question Need easy Mini Quiche recipes please ....

    Hi all,

    Please throw me your best ever ... not to mention easy ... Mini Quiche recipes

    I admit i have NEVER made them before so PLEASE any cooking hints/tips in regards to fillings, pastry, etc ... would be so appreciated

    I make them in a muffin tray... so they're bigger than tiny ones iykwim!
    I use a glass to cut out puff pastry, then stretch it slightly to line the muffin tray (make sure you spray the muffin tray first)
    Put any ingredients you want in a bowl.... i usually do ham, cheese, onion, mushrooms, capsicum, corn, fresh tomato any combination of the above! Mix it all together then spoon in to pastry. In a bowl whisk together eggs and a dash of milk... I'd do say six eggs for a dozen mini quiches... add salt and pepper then pour into prepared quiches. Bake in a 180 oven until set and browned.

    They freeze well too

    Can you tell that I don't actually follow a recipe!

    Another thing you could try if you are not too happy about all the fat in puff pastry is to use slices of white bread. Cut the crust off the bread, press the bread into the muffin tins then continue with rikki’s recipe

    I do a recipe in muffin trays too. But I don't use any pastry, I use slices of ham instead. Place a slice (or half a slice depending on the size of the ham), in each greased muffin hole. Beat 2-3 eggs in a bowl, add a dash of milk and any other fillings you like. I usually put corn, sliced shallots (spring onions). Pour egg mix in each muffin hole and top with half a cherry tomato. Bake until nice and brown and set. Note you don't need any salt due to the ham - you can add cracked pepper if you like.

    I do puff pastry deal too. I line my muffin tray with oil and then pop puff pastry in. I mix 6 or so eggs whisked together with a dribble of water and a spoonful of self raising flour. I mix half a frozen spinach container, and 2 slices of ham, I try to get more veges in so sometimes I put 1/4 cup of pureed vege in as well, pop a bit of salt & pepper in. I serve them with a tomato sauce happy face on top for the kids and I do a slice of tomato on top of the adult ones.

    Yummo! I may have to make some today... our new chooks are laying like there is no tomorrow and I have no space to store the eggs.

    I make them in mini muffin trays, I cut each slice of puff pastry into 9 squares, or I cut in rounds using a tupperware cutter. I use tinned corn, kraft block cheese (the stuff you get thats not in the cold section... I only use this cheese for 2 recipes as I am not a fan of processed cheese but I just can't get the same taste with fresh cheese!) chives/spring onion, cream, milk and egg. I'll find my exact recipe if you're interested. You can add diced bacon if you like. I also freeze them for DD for school and she loves them!
