Or perhaps use the slicer blade in my food processor. Hmm wonder if it's worth the bother of getting it out.

yummy! i love potato bake, and am always giving my recipe out to family and friends. I see you've got lots of yummy ones already, but i'll post mine just in case.
I par cook the potatoes and slice them up.
I then rub some butter on the base and sides of the baking dish, and then slice a clove a garlic and rub that on as well.
Next - i put a layer of potatoes, some diced bacon, sliced shallots, grated cheese and pour cream over.
i repeat the layers until potatoes are used up - finishing with the cheese on top.
i bake it in the oven for about 40 minutes or until nice and golden and cooked through.

Heres mine.. its quick and easy.. and i think tastes just as good if not better than the long cooked oven one.

    ............................................

    Potatos cut into 3cm pieces
    60g Butter
    20ml Oil
    1 Small Onion
    60g Bacon cut 5cm pieces
    3/4 cup Tasty Chesse

Cook potatos until tender, drain. Add butter, allow to melt. Place aside.
Preheat grill to moderately hot (180 degrees)
Heat fry pan add oil, fry onion till soft (1 minute), add bacon - cook until crisp.
    Combine with potato.
Add 1/2 cheese. Stir Carefully not to break potato too much.
    Poor into baking dish.
Sprinkle cheese & place under grill till crispy and brown.

If you wanna add more or different types of cheeses too go for gold!

Thanks girls potato bake was delicious. I made a mixed lot. LOL. Got a sachet of sour cream and chives potato bake thing from the shop. Used about 6 large potatoes, some diced bacon and onion and fried that up, layered the potato, and in between layers added the bacon and onion, then mixed together 600 mls of thickened cream and the sauce sachet and poured it over the potatoes. I cooked it for a while, then put some grated cheese on the top of it.

Yummy as. And not at all sloppy.

Thanks for your help girls It was a real hit too !!

WOOHOO! Thats great news Trish I think the plan is if you do half & half cook it half first and if you do whole cream cook it a while in the oven. Sounds like it was delish!

Just to throw something different out there.....

We use pretty well the same directions as Cai suggested but I use sweet potato, sprinkle it with cinnamon & use coconut cream instead of thickened. *drooool* I think it might be on the menu for dinner tonight!

I realise this is a bit late but for my potato bake aswell as the bacon and onion between each layer i also do a sprinkling of cheese between each layer AND mix a sachet of dried french onion soup mix with the cream, then pour over a small amount of cream between each layer and finish off with the remainder of the cream, bacon and latherings of cheese - oh so fatty but OH SO RICH AND DELICIOUS!
