Here is another easy recipe I tried out and it was a success...

Sweet Potato and Spinach Frittata

- 2 sweet potatoes, peeled, thinly sliced
- 1 x 250g packet frozen spinach, thawed
- 8 eggs, lightly beaten
- 1/2 cup cream
- 1/2 cup grated tasty cheese
- salt and pepper to taste

1. Grease a 20cm x 30cm baking dish/pan. Boil, steam or microwave sweet potatoes until just tender. Drain well. Cool.

2. Squeeze excess water from spinach. Combine spinach, eggs, cream and cheese in a large bowl. Season with salt and pepper; mix well.

3. Layer potates over base of prepared dish. Pour over spinach mixture.

4. Cook, uncovered, at 180 degrees C for about 20 mins, or until lightly browned and set. Stand in dish for 5 mins.

5. Cut into triangles and serve with green salad.
