After wasting "my" rest time on googling, I found an AWSOME homemade snack
1/2 cup of organic oats and a couple of mashed banana's , mixed together & spooned
Onto a tray, oven for 15 minutes, done ! A hit in this house

I just use fruit/veg - apples, pears, carrots, grapes... or failing that, toast goes down well. The banana oats looks nice, but far too much of a faff when bananas are available and porridge takes about a minute to do.
I'm too scared to use carrots & apples unless grated. So I found a grated apple, carrot & chicken mince pattie recipe

DS does NOT eat plain, unadulterated fruit (I still offer it every day) and I don't buy processed foods, so I hear you. I'm always on the lookout for easy healthy (preferably fruit-based) snacks.
Sometimes he'll have bran 'worms', oat clusters or just plain dry oats. Occasionally he'll want frozen peach ice cubes or frozen berries, which makes this mummy do handstands, as its pure fruit! Or maybe raw carrot or a whole flat mushroom (a fave when we go shopping - i have to go back, pay for one mushroom, then cop looks from people who think we haven't paid for it). Ok, so DS is a weirdo!
Currently looking into homemade oat clusters, so the oat/ banana things might work for that. And, homemade muesli bars that I can keep in the freezer.
We also went through a chocolate ball stage - blended up nuts, dried fruit and rolled in coconut, but these are out of favour at the moment.
my DD loved rice crackers and a dip (hommus, tzatziki etc) or a slice of cheese and some strawberries.
blueberries are a fave too, and i make my own LCM's into small squares for a "treat" while i do stuff...
I'd go for more fats and protein snacks if possible. We love cheese, ham slices, a slice of butter, cold baked chicken and ice cream (homemade, honey sweetened) around here
DD3 will get pieces of salami, rice crackers, banana bread, a piece of toast/crumpet or sultanas if I need to distract. Sultanas are the best - minimal effort, maximum time for her to pick them up one by one. There's no eating of whole fruits here either. Very frustrating
