I can't help you with side dishes as we always do whatever meat we're having plus vegies & then either mashed potato, rice, or chips/wedges. So very boring there!
But i have a potato salad recipe, is really simple
You need:
6 Medium potatoes
4 Eggs
Chopped onion (maybe about a tablespoon? I use frozen chopped onion so I just throw it in!)
100g of ham, chopped
Whole egg mayonnaise (whole egg, usually because it's creamier. The creamier the mayo, the better!)
Peel & cube potatoes, boil with the onions until potatoes are JUST soft, so the fork goes through, you don't want it to turn into mash. Boil your eggs. Drain your potatoes, chop your eggs, i usually chop them into 4 pieces. Let it cool. Add it all together, put your ham in and then pour mayo all over it. There's no measurement for how much mayo, just keep pouring it on until it goes nice and creamy, usually need to taste test to make sure it's right
