    Question Stuffed capsicums

    I need a recipe for stuffed capsicums if anyone has one

    I think i have eaten one that was filled with beef mince, rice and tomato

    I could probably make one up myself but i'm not sure of what spices to use and do you cook the capsicum first or just fill it and cook from raw??

    Yuuummmmy, cant wait to eat it for dinner

    My MIL does a beautiful one with brown rice, sultanas, pine nuts, roasted garlic, fresh coriander, fresh mint, ground cumin, ground coriander, tiny bit of cinnamon and ground ginger.
    You could also do it with couscous instead of brown rice (she doesn't cos SIL is coeliac) or pistachios instead of pine nuts, or add dates and dried apricot to the sultanas.

    Hey MrsB

    This is a Turkish version
    Cook the mince, put it through the blender so it is finely chopped.
    Add finely chopped onion (again just wizz it through the blender)
    Add the rice
    Cook for a few minutes
    Add fresh finely chopped parsley, herbs such as black pepper, sweet red pepper, oregano, allspice, mint
    Stir through
    Add 1-2 pureed tomatoes
    Cook for few minutes
    Add the salt
    Add very little water, close the lid and simmer til all the water is gone (5mins or so). The rice is only partially cooked.

    I usually boil water, and put the capsicums in for about 1-2 mins to soften them.

    Fill the capsicums, use the top part of the capsicum as a lid.

    Put in ovenproof dish, mix water and some tomato paste, fill this water to halfway up the dish. Cover with foil and bake for about 30-35 mins.

    Thanks ladies, now which one to make first??? lol

    Nuts and sultanas sound just yummy but i'll do the turkish one tonight cause i have everything at home already fot that one.

    I make a recipe very similar to Turkish Delight but with heaps of cinnamon added. Fry the cinnamon with the meat and onion then add all the regular stuff. It has a lovely flavour and you will have everyone guessing what the mystery ingredient is LOL.

    These all sounds so good and are really making me wish that I didn't loathe capsicum with a passion.

    Snugglybean, I wonder how your recipe would go if used to stuff zucchini instead?

    AWESOME, that's how.
    Especially those big fat home grown zooks. Or eggplant. Roast up, scoop out the flesh, chop finely, mix with stuffing and stuff it back in! Yumptious!

    oooh they are in the oven right now. I had some spinach leaves that needed using so they went in too. yummo
