1kg Chicken Mince
1 cup of breadcrumbs
3tablespoons of sweet chilli sauce
1 tablespoon of ground coriander
4 spring onions chopped
1 cup chopped fresh coriander
1-2 tablespoons of lemon juice
2 table spoons of oil.
Preheat oven to 200 deg.
Mix Chicken & breadcrumbs in a large bowl, add the chilli sauce, ground coriander, spring onion, lemon juice & fresh coriander & mix well with hands.
With damp hands roll meat balls into little meat balls small enough to eat with your fingers, or make them bigger for hamburgers.
Add the oil to a fry pan & in batches brown the outside of the meatballs. I found it easiest to plonk them in & rather than try to turn them individually I just picked up the pan & swooshed it around so the balls all rolled around getting brown & had no sticking!
Then pop them on a tray in the oven to cook inside for little meatballs approx 5-10 mins. For Burgers 15-20mins.
Serve with sweet chilli sauce⦠Delish & freeze extras for a secret snacks!! Hee hee
Fletch, I bought extra chicken mince coz for 2kgs it was $10, so I made a heap of the meatballs & then made 2 lot's of the sausage rolls again & have both in the freezer, I added more coriander & chilli to the sausage rolls for a bit extra oooomph!
But the girls both loved them so I am happy to have stuff like that for easy dinners if I am late from work heat a few up with some veggies etc & I know they love them & I made them....
I also have the freezer full of mini quiches too! I love baking!

OOOH actually I dreamt about making the meatballs into burgers last night & you know how in the sausage rolls they have cream cheese added (well for Fletch whom knows the recipe!) I dreamt I made the burger sized meatballs & put cream cheese inside like jam in a hot jam ball donut! YummmO!

Tracey my Thai Turkey burgers are almost the same exact recipe!!! I use turkey mince & lime juice instead of lemon, and 1 tsp crushed garlic. I do them as burgers & either serve them as burgers or on a salad as rissoles. YUM! Funny but I took the turkey mince out of the freezer a few minutes ago...
Tracey, my family are boring when it comes to flavour so I 'aussie-fied' them by replacing the spring onion with regular onion, the coriander with parsley and the sweet chilli with good ol' tomato. Kinda makes me cry cause I love stuff with flavour, but they raved about my Aussie Chicken Meatballs! Thanks.
I would if I ate chicken! But they're not that good to make me 'jump the fence!' I've been a vego for over 20 years, I don't think I'll be changing now.
