    What have I done wrong? Think I just killed dinner :(

    Its our first big kid free night all holidays and I wanted to make coconut chicken for my partner and I. I followed a recipe (low calorie) which said to put the low fat carnation milk in a saucepan, put in the chicken, then add the fish sauce, lime juice and 100ml water. It looks curdled really bad . None of the ingredients are off. How can I save this/pull this off - or not?! Help!

    I think cos the lime juice is acidic it can curdle the milk. Especially since its low fat milk.

    Could try and strain the milk away then add teaspoon of raw sugar and blend it? Then add it back into chicken...
    Or ring your local Thai place and order one!!

    Later in the recipe it says to add sugar. But surely its not meant to curdle? Had no idea sugar is meant to fix it...

    Sounds like the lime has curled it. But I know that you can blend it to bring it back toegther, well the liquid part anyhow But yeah if not order in and treat yourselves

    The carnation milk has curdled I am afraid. I have a fantastic coconut chicken curry recipe, it uses coconut milk and I use lite coconut milk. It's a hit here.

    I got the recipe from indianfoodforever dot com...for next time and it is low in fat.

    Is it Carnation Coconut Milk in the recipe or have you subbed it? The super low fat content of the Carnation stuff mans that the milk proteins are not protected and that means you are more likely to get curdling. By heating the milk first, the protein will have a chance to bind first before you add the thing that will cause the curdling, itms, so bring the milk to temp first next time, and add the lime juice at the end, it may help.
