    Heather, do you make your own lemon chicken? I've never even thought to do it, do you have a recipe?

    I think we're having Lamb chops with mashed potato, roast pumpkin, carrots and peas. Good old dairy-free dinner LOL!

    Janie..I am making my own. I got inspired as our lemon tree had so many lemons on it, I was thinking up ideas to use them.

    1/2 cup lemon juice
    2 tablespoons honey
    2 teaspoons grated ginger
    1 cup chicken stock
    1 teaspoon soy sauce
    1 tablespoon corn flour
    2 tablespoons water
    4 medium chicken breasts, halved horizontally
    2 eggs lightly beaten
    cornflour, to coat
    oil for frying
    spring onion for garnish

    Place Lemon juice, honey, ginger, stock and soy in a small saucepan. Bring to boil. Mix the cornflour and water together. Add to the sauce and simmer till thickened. Remove from heat
    Trim chicken of excess fat. Dip into the beaten egg and then into the cornflour. Shake any excess conflour.
    Half fill a wok with oil and heat until a cube of bread browns in 15seconds. Add chicken and cook for about 5mins or until golden and cooked through. Drain on crumpled paper towel.
    Gently rewarm the sauce. Slice the chicken and serve drizzled with the sauce and garnish with spring onions.

    I got this recipe off the net..it seems easy. I have just done the sauce and have my rice in the rice cooker. Off to bath kids and then will cook the chicken. I am also having the bok choy to add some green and clean crunch to the dish.

    ARGHHH!!! After doing the whole pie by myself, df waltzes on on and wants to put the mash on top...he's slathering it on like a frigging brickie with the spatula, I'm standing there saying do it properly, don't be a d-head, and BOOM, he's tipped the dish and most of it's on the floor. Rarrr MEN!
