Slow cooked lamb shanks with mash.....it smells so good, wish it was dinner time already!
Here you go Eluned...an absolute winter favourite. DH cooks it.
8 x 4 pieces veal shank (Osso Bucco)
2 Tblsp olive oil
2 onions, sliced
6 cloves garlic, peeled and smashed
2 cups dry white wine
2 cups chicken stock
1 Tblsp chopped thyme
rind 1/2 lemon, cut into strips
4 bay leaves
2 baby fennel bulbs, halved
cracked black peppper
mashed potato to serve
Toss veal in flour and shake away excess flour. Heat oil in frypan over high heat. Add veal to pan and brown well. Place veal in the base of a large baking dish (or slow cooker). Place onions and garlic in frypan, cook until golden and add to baking dish(slow cooker).
Add wine, stock, lemon rind, bay leaves and thyme to baking dish (slow cooker). Cover dish and bake at 180 for 1.5hrs. Add fennel and bake for a further 45mins. Serve in deep plates with fennel and pan juices and mahsed potato drizzled with olive oil Serves 4
DH has had ours in the slow cooker since this morning, it's beautiful. It is also really good the next day if you have any left over. He just adds the fennel 45mins before we are ready to eat..that would be me now :D
We are also doing a slow cooker dinner tonight - but not as nice as yours Heather72. I am doing honey mustard chicken..........yumbo.
We're getting take-away Indian tonight! YUM! I've got a couple of girlfriends coming over and its the perfect weather for an easy tummy-warming feast. I can't wait. I wanna order it now!
Roast pork loin (with crackling of course), potato gratin, steamed asparagus and homemade spiced apple sauce. We never eat pork but it was the nicest looking bit of meat I have ever seen at the butcher so couldn't not buy it LOL Fingers crossed I don't stuff it up!
Tomato and herb roast chicken with cauliflowercheese, roast potato and pumpkin, honey carrots and corn on the cob followed by chocolate pudding

I think chicken rissotto
Cheesy meatballs with sauce on Spag with fresh parmasan!
chicken snitzels with creamy garlic and prawn sauce on top, broccoli, cauliflower and mash potato and pumkin
Grrrr change of plan! Now lemon chicken as Aroborro packet was open and not in a container and had bugs grrrrrrrrrrrrr
I think maybe mash with frozen vegies and a small tin of tuna mixed in for the boys. I suppose I could pretty it up with grilled cheese on top.
And I think pumpkin soup (cooked over the warm stove with a glass of something while the DH wrangles the kids) for the adults.
So there you have it - Nelle: helping unprepared and non-fancy cooks feel reassured since 08 (or whenever I first posted in here).
Lamb chops with risotto with bacon, silverbeet, carrots.
Glass of Moscato.
Custard for desert.
I did vegetarian burrito's - beans, carrot, red onion, lemon and lime juice with avocado, greek yoghurt and wombok wrapped.
