all i do is put some minced garlic and cream in a sause pan let it simmer for a while the add my prawns ..dh cooks the on the bbq first its very nice but god help anyone if you get an extra prawn lol we all have to get the same amount lol.
and its chicken wings and fried rice tonight
probably soup tonight. Either creamy cauliflower or potato and leek... and some crusty bread on the side

A few of you asked for that spicy coconut chicken slow cooker recipe a few posts back....here it is...It sounds like a lot of work but isn't really. The spice paste can be made in advance and stored in the fridge. It takes me about 15 -20 minutes tops to throw together (and I'm a leisurely cook ;) )
1 tablespoon peanut oil
3 chicken thigh fillets (660g), halved
6 chicken drumsticks (900g)
2 medium brown onions (300g), chopped coarsely
1 cup (250ml) chicken stock
1 2/3 cup (400ml) canned coconut milk
3 fresh kaffir lime leaves, shredded thinly
315g green beans, chopped coarsely
12 fresh thai eggplants (350g), halved
3/4 cup loosely packed fresh coriander leaves
Spice Paste:
4 shallots (100g), quartered
2 cloves garlic, chopped coarsely
5cm piece ginger, chopped coarsely
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons ground turmeric
3 small fresh red thai (serrano) chillies, chopped coarsely
2 tablespoons fish sauce
2 tablespoons peanut oil
2 tablespoons lime juice
1 tablespoon grated palm sugar
1. Make spice paste by blending or processing all ingredients until mixture is smooth.
2. Heat half the oil in a large frying pan, cook chicken, in batches, until browned all over, place in 4.5 litre slow cooker. Heat remaining oil in same pan, cook onion, stirring until soft. Add spice paste, cook, stirring until fragrant. Add stock, bring to the boil.
3. Remove from heat, stir in coconut milk and lime leaves, pour over chicken. Cook, covered, on low for 7 hours.
Add beans and eggplant, cook covered on high about 20 minutes until veggies are tender. Season to taste, sprinkle with coriander.
Tonight i made Pita Bread Pizza's - 1 was ham, cheese, tomato paste, capsicum, salami, chicken, pineapple the other was my favourite and so so delicious: Tomato, Spinach, Pumpkin, Chicken & Cheese.... Mmmmm *drool*

Roast chook and salad last night
Tonight - Butter chicken, basmati rice and steamed greens
Tues - Beef and red wine casserole w vege
Wed - Pumpkin soups and crusty rolls
Tonight DP is making us chicken schnitzel sandwiches with avo & mayo before we head to parenting classes!
We are having sticky pork ribs with rice and stirfry veggies, ribs have been marinading overnight, so they should be yummo!
Tonight is Pork Steaks which will be browned on the stove then cooked in the oven with apple sauce over the top, on the side we will have peas, corn, carrot, broccoli and cauliflower (brussel sprouts for A & I in apple sauce)
well im very upset girls,i had mince out the front to defrost and i forgot about it and now its gone all hot and yukky..bumma.
so now its boring old satay chicken wings
leek and brie tart and homemade pear and cinnamon jelly for dessert (just kind of made this up as I went along so hope it turns out!)
Tuna bake for us tonight. Need something light after last nights pizza :)
Barbecued satay beef kebabs, steamed vegies and mac cheese we had tonight.
Roast marinated lamb (honey mustard) with roast potatoes, roast sweet potatoe, roast carrot,, peas, corn, brocolli and cauliflower
We just had a yummy chicken, bacon & rice bake w/spinach & corn... was absolutely DIVINE! Allycat you have me drooling!

I must say the pork was beautiful..... browned on the stove then in the oven with some apple sauce and onion... mmmmmmm
tonight is chicken burgers and wedges, nothing flash as i really cant be bothered!
Chicken curry in the slow cooker (chicken drumsticks, potatoe and will add peas and corn later yum yum) served on rice
Tonight either marinated pork spare ribs or nachos! Just feel like something yummy and easy hehe
Pumpkin soup Entree
Lamb and mash for me and DH, sausgaes and mash for the girls (DH will probably have 1 sausage though) for mains
And I am thinking apricot scrolls with some icing and maybe some dessicated coconut on top for dessert
Italian beef casserole in the slow cooker. I wish I had 2 slow cookers so I can have a dessert going at the same time!
