DH is still at work so the boys and I had zucchini slice that I was making for tomorrow's day care lunches. There's still enough left for all our lunches as well - BONUS!! And it was yummy.

Well tonight we made spag bolognaise with a hint from deceptively delicious & added some sweet potato and broccoli puree... no one noticed or even knew until they finished ;)
Wow Christy, that's great to know that deceptively delicious really works. I was wondering. I guess I'll have to go and buy the book now.
I made chicken kofta (Indian chicken balls). They are really easy - just chicken mince, korma paste, bread crumbs and chopped onion. You can add coriander if you like. I did rice, and steamed some left over vegies in the rice cooker at the same time (pumpkin, cauliflower and beans). Then when the kofta was cooked I threw the vegies in the pan with more korma paste and made a curried vegetable mix. Very delicious and a great way to use up old vegies.
Tonight we are having chicken and vegetable rissoles (home made) with oven fries (also homemade).
Tonight (so I remember) is fried rice made with brown rice and lots of veges!
Yum..I might make satay chicken shewers with rice and salad..
