We had buckwheat rigatoni with leeks and fontina cheese last night which was very simply and truly fabulous....today we've had a late lunch of fried eggplant slices topped with leftover bolognese sauce and melted fontina and parmesan for lunch.

Probably chicken with spinach, gorgonzola and walnuts for dinner, haven't quite got that far yet...

I've never been in this thread before!

I thought we had some stewing beef in the freezer which I was going to defrost overnight and put in the sc tomorrow for dinner tomorrow night, as I have a midwife apt at 1.30 (hmm, must remind the Man that I will be unable to pick up the Boy from school....), but could not find it. I must not have bought any.... I am so confused. Guess that means I will have to get some in the morning. Der, just realised that I can get some first thing after dropping Boy at school. Gee I'm thick sometimes.

And there isn't a great deal else in the cupboard that is inspiring me for dinner tonight.

There is some mince in the fridge, already cooked with a little bit of tomato sauce that needs some serious bulking out to make a meal for all of us, and I have also found some frozen bolognese sauce in the freezer, which is defrosting now in the nuke box. The only thing is, I don't know if it is spicy or not! I guess I'll find out soon.....

Sorry this post was rather long winded and full of very little. I think I needed to vent. Not really about food. Just vent in general. Thanks everyone. And everyone else's dinners sounds very yummy.

We will probably also have mississippi mud cake for dessert which I made over a week ago. It didn't get touched (AT ALL) for a whole week. Probably because it wasn't iced, so the Man didn't want it. It took him a week to say something about no icing, so I started making ganache to go on it, and he said I didn't have to make icing if I didn't want to. You know, its a bit late when the chocolate is already melting in the pot! Not that I minded making it, just had the cbf's all week. As I do every week, about everything. Anyway, warm mud cake with vanilla ice cream. Sorry, more venting.

Thanks AJC I should be able to find it. I found a recipe for it the other day, an eggless recipe, the person did say it should be tried with egg first as it is too difficult to make without unless you are an expert :s I am happy to see other recipes though.

Tan - Bread is meant to be easy . All of my sourdoughs have been failures I am going to cheat and add yeast next time. French bread is meant to be super easy though. We will see when I get around to making it...

10 minute pasta salad with cherry tomatoes, beans, fetta and parsley with a lemon pepper dressing. It would have had fennel and garlic marinated olives as well but I forgot that I'd run out. Doh. Easy peasy.

ETA - yay - I did have some olives left...

LMS - The trick with sourdough is to allow for long rising periods - sourdough doesn't do anything quickly - my first attempts resulted in paving slabs too...try letting it rise for at least 6-8 hours initially and then a further 4-5 hours for the second rising.

French bread is easy, although you'll need to put a pan of water into the oven with it to generate steam - steam is essential for a good crust on french bread.

Gnocchi made with egg is much more resilient and less prone to break up when it is cooked, so it's usually the right way to go - especially if you want to add some additional ingredients to the dough - sun dried tomato, pesto, mustard, olives, etc can be used to give the gnocchi a little more flavour of it's own.

We had pan fried chicken with fontina, sauteed in milk (sounds weird, tastes delish!) with some steamed vegies. DS is sick though, and wouldn't eat a bite, not even a carrot (which is his fave) so he had yoghurt

DH is currently asking for ice cream with choc and caramel topping I think I might have some ice cream too, but I'll make my own sauce.
