I do a megal cook up every other month. The things that I find reheat well, and which I do are:
* pastabake
* lasagne
* bolognase
* salmon patties (and I keep meaning to do a broader set of bubble and squeak)
* curries (indian and thai)
* stirfry (but only with rice - not noodles ... they don't seem to reheat well)
* stews (but they're hit and miss - I need some tips in this area ...)
* soups
* chilli
* casseroles
that's all I can think of ... I know I'm missing things though ...
Yes lemon juice is great for dishes and for making cordial in summer! Coconut milk is easy peasy. Just google all the recipes are the same. Once you're done with with milk you can dry out the coconut in the oven and blitz into coconut flour
And can I just say threads like this make me think of my dream of stockpiling. With a food room, filled with shelves and freezers. Ho hum.
I do the same with lasagne make two or three and when assembled but not put in the oven I freeze them so I can defrost and cook and it tastes like fresh!
Lots of leftover portioned meals. I deliberately cook extra each time I do something that freezes well so I can have a lazy night and not cook sometimes while on maternity leave! When Im working I do afternoons and take one with me and defrost the rest for kids and DH
