Ok, now I am a bit of a Satay connoisseur and this is my FAVE recipe for it!! It is super duper easy!!
2 Tbs Brown Sugar
2 Tbs Chopped Coriander (optional)
1/4 cup Sweet Chilli Sauce
1/2 cup Smooth Peanut Butter
2 cloves Garlic
1/2 cup Coconut Milk (Skim Milk works just as well)
1/2 cup Water
Put it all in a pot together and let it simmer a little. Stir when needed until it thickens and that's it!!

1tps cumin
1/2 tsp ground corriander
1/2 tsp ground tumeric
3/4 cup peanut butter
1 can coconut milk
1tbs sweet chili sauce
cook onion and garlic on low for a few minutes until onion becomes clear, add spices and cook for a minute, add peanut butter,coconut milk and sweet chili sauce. stir til combined! and heated through, yum
Satay is uber popular in this house too, but I must admit, I have never made it before.
I was a bit surprised at the inclusion of the sweet chilli, but it makes sense for that little 'bite'. The Chinese restaurant we go to/get take away also serves it with pieces of pineapple.
Am adding chicken and peanut butter to my shopping list for Friday!
A question, do you really need to cook it on skewers?
