    I have just discovered a really nice one on the Taste website, it's the one with 375g of zucchini. My one year old loves it!

    Zucchini slice

    I have just discovered a really nice one on the Taste website, it's the one with 375g of zucchini. My one year old loves it!
    That's the one I've used for several years too. It's delicious!!! I often add a grated carrot too and freeze it for the kids for a quick and healthy lunch or dinner.

    PurplePenguin im so sorry I completely forgot to come back to this! Oops. Anyway if you still want one or for another time here's the recipe i use...

    375g/2cups grated zucchini
    1cup grated cheese
    1/2cup vegetable oil
    5 eggs - lightly beaten
    1cup self-raising flour
    Seasoning to taste

    Then basically throw it all in a bowl and mix together.
    Pour into baking dish/casserole dish and bake at 180' for 30-40mins, or until 'springy' and just browned.

    PS you can add in other things, I often put in some onion or corn is really yummy
