At the ABA Christmas breakup this week a lady (who has the same first name as me! Lol) brought in a tray of slice, yummy yummy peppermint slice! She explained the recipe to me, it is eerily similar to these ones here.

1 1/2 packets arrowroot/nice/etc biscuits
1 peppermint crisp
1 tin condensed milk

Even though the slice only had *one* peppermint crisp bar and one and a half packets of biscuits, the minty taste was quite enough. It wasn't until I got home and thought to look up this thread that I realised what the original quantities were! Looks like tomorrow I am getting a couple of cherry ripe bars along with the condensed milk. Aldi, here we come.....

I made these for my "cook club" a few weeks ago in the TMX. Chucked in the biscuits and gave them a quick blitz, then added the chocolate bars (I may or may not have done orange, peppermint and cherry ripe all for the one event . . .), gave that a blitz and then added the condensed milk for 2-3 seconds on 7-8. You need to do a bit of scraping down to get it into the blades but worked fine - and a whole lot easier than my food processor when I made them for last Christmas ;-)

Sorry for the hijack ladies but need some advice.

I am going to making cute little mini Christmas puds for DS4 daycare. Basically the recipe is plain biscuits crushed, condensed milk and cocoa. Mix all together and make into ball. Drop into coconut and coat. Melt white chocolate on top like the way a Christmas pub could look if you had brandy sauce on it and top it with cut up mint leaves (the little sweets) and cut up strawberries and cream (sweets) to look like the holly - leaves and berries. Get chocolate to set and voila cute little Christmas puds.

NOW I have also promised the teachers that I would make an adult version for them so I am looking for inspiration for the alcohol I use and how much. I am guessing they are like an proper rum ball with rum. Not sure if I've got rum in the house - what alternative could I use and how much do I put in?

Re alternatives to rum - no help here (I was looking for ideas the other day but have decided to wait to pay day to get rum) (eta maybe a nice port/fortified wine seeing as they're puddings?)
Re amount - rum ball recipe I found the other day said 1-2 tablespoons per mix

I haven't read the whole thread (whoa who would imagine 9 pages on cherry ripe balls ) BUT if making these for xmas day could you make them a day or two beforehand or are they best made on the day?

Ang; you can make these days in advance, or packed properly, they can be frozen.

I killed my little food processor whizzing up biscuits to make these. So sad.

Leave them in your fridge at your own peril, they wont last lol.

Freezing is fine. Many members have done it.
