    Hello all,

Well, as some of you may have noticed i've been on a baking frenzy since Winter hit & also since my 3 year old DD has taken a huge interest in baking/cooking (need her to be my slave cook at some point, LOL )

So, i bought a pkt of Cadbury milk choc chips today & made me wonder would anyone care to share their Favourite Chocolate Chip Biscuit/Cookie recipes

Also What is your favourite brand of Chocolate Chips ?? ... eg, Nestle, Cadbury, generic brands, ... milk, dark or white choc

    These are Nigella's choc-chip biscuits.

I don't really bake with chocolate much because I find it really hard to find free trade chocolate & cocoa for cooking

    INTRODUCTION

I call these my best friend Choc Chip cookies because my best friend who I absolutely adore gave me the recipe. It makes around 60 cookies depending on the size you choose to make. So easy and so yummmmyyy!!! You will love them!

    INGREDIENTS

    500g Butter
    12 tablespoons caster sugar
1 tin (400g) sweet and condensed milk
4 and 1/2 cups self raising flour
2 packets of milk chocolate chips (500g)
Serving Size : Around 60 cookies

    METHOD

    1. Cream the butter and sugar
    2. Stir in the sweet and condensed milk.
    3. Add the flour and choc chips and stir to combine.
    4. Roll balls of the mixture how big or small as you wish. I usually use around a tablespoon as a guide.
    5. Place the balls on a tray lined with greaseproof paper.
    6. Flatten balls slightly with a fork.
    7. Bake in a 180 degree oven for around 8 minutes depending on the size. Use the first tray as a guide as to how long to bake. You are after just a tiny bit of golden brown.

Best Ever Chocolate Chip Cookies - Originally from Coconut & Lime Blog

    Ingredients:
1 cup plus 6 tablespoons flour
    1/2 teaspoon kosher salt
    1/2 teaspoon baking soda
1/2 cup unsalted butter at room temperature
    1/2 cup dark brown sugar
    1/2 cup sugar
    1 egg at room temperature
    1 teaspoon vanilla
8 oz semisweet chips (I used Hershey's Special Dark chips)

    Directions:
Preheat the oven to 350. Lightly spray one cookie sheet with spray oil. In a medium sized bowl combine flour, salt, and baking soda. In a large bowl, cream the butter and sugars until light and fluffy. Add the egg and vanilla and combine thoroughly. Gradually add the dry ingredients to the sweetened butter. Once combined, add chips and distribute evenly using the mixer on the lowest setting. Form cookies by dropping 1 teaspoon of dough on the sheet two inches apart. Smoosh them down a little then bake until light brown, about 12 minutes. Let cool if possible then serve with plenty of cold milk.

Yields: aprox. 2 dozen cookies, depending on size
I often mix it up and use a third white, a third dark and a third milk. But basically any chocolate, even lindt (whatever we have) gets used in choc chip cookies. And IMO brown sugar is a MUST in cookies... it just makes them chewy and delicious!

I'm with Rouge, chunks are much better....but hey any kind will do.
Made these yesterday....and they're all gone

Bill Granger's Peanut Butter and Chocolate Chunk Cookies
    Makes 18

150g firlmy packed soft brown sugar
    2 tablespoons unsalted butter
    4 tablespoons crunchy peanut butter
    1 egg
    1 tablespoon natural vanilla extract
    155g plain flour
    1 teaspoon baking powder
100g good quality milk chocolate, chopped

Preheat the oven to 190 degrees. Line two baking trays with baking paper. Beat the sugar, butter and peanut butter with electric beaters until pale and creamy. Add the egg and vanilla and beat until well combined. Sift together the flour and baking powder, fold into the mixture and then stir in the chocolate.

Take heaped tablespoons of dough and roll into balls with your hands. Flatten them slightly and arrange on the trays, leaving some room for spreading. Bake for 10-12 minutes, or until golden brown (the cookies will be soft until they cool). Cool on a wire rack and then store in an airtight container.

LOL ... my DP hasn't said anything as of YET ... but i have seen the raised eyebrow in a kindish manner & lately he has been hitting the usual dusty treadmill in the garage

(Oh, Kim ... Cendrine starts 3year old Kinder tomorrow can't believe my one & only baby has grown so quickly for the day to come ... i feel sad but excited FOR HER at the same time as she is so lively & loves to be around people of any age ... she said to me before her bedtime tonight "Mummy will you miss me" and i said "Yes, i will miss you but i am very happy you are going to Kinder because you are going to have a wonderful time there " )

They are are ok i mean they DO taste nice BUT i like my choc chip cookies a bit on the raised side as these were very flat ... and i think i prefer them looking dark not like vanilla IYKWIM, maybe might add cocoa powder next time

    Here's the recipe if interested ;

    Classic Chocolate Chip Cookies

125g butter (i used unsalted butter from Aldi)
    1/2 cup brown sugar
    1/3 cup caster sugar
    1 teaspoon vanilla essence
    1 egg
    1 & 1/2 Cups SR flour
3/4 cup Cadbury Milk Chocolate Chips

    1. Preheat oven to 160C (my oven i needed to bake at 170C).
2.Cream butter & sugars until light & fluffy.
3.Mix in the vanilla essence & egg.
    4.Stir in flour until combined.
    5.Add choc chips.
6.Place teaspoons of mixture on greased baking tray & bake in moderate oven for 10-15mins (I placed on baking paper on baking tray & I baked for them 15mins ... Be warned don't put too many on tray as these spread heaps).

Do you find these ones a bit difficult to roll? I just made them this morning because I wanted some cookies but had no eggs. I found them really dry & hard to roll into balls. I managed & they are in the oven, but just wondered if anyone else had the same problem?

This is my favourite recipe. It is great because it doesn't have any eggs in it.
It is always a huge success here. I have changed it up a few times and added apricots & white choc (which are sooooo good) but I mostly use the milk choc melts when making regular choc chip cookies.

    Lisa's Choc Chip Cookies
    • 250g butter
    • 1 cup sugar
    • 1 can condensed milk
    • 3 cups sifted self raising flour
    • 1 packet of milk chocolate chips

Cream together the butter and sugar. Add condensed milk, flour, chocolate chips. Mix through. Roll into balls, place on biscuit tray and bake for 12-15 minutes at 190C. Yum!

This also freezes quite well. I form the dough into a log, wrap in cling wrap and freeze. Then when it is needed, we cut into the appropriate size, roll into balls & cook.
