Hi all,
I just made an egg-free choc cake this arvo to take to my DD's Kinder tomorrow morning but it is not cooking in the middle of the cake and therefore the longer i leave it in the oven it's burning on the outside ... and i'm sure it's largely to the fact that the recipe stated a 22 x30cm tin when my tin is a 20 x 20cm round tin (even though i didn't put all the batter in my tin).
Can any one help please help me with an egg-free chocolate cake recipe that i can put in a 20 x 20cm round cake tin ???
I'm getting desperate here as i don't want my DD to go to Kinder tomorrow morning without a birthday cake (her 3years old Kinder is only one day per week for 2.5hrs so can't take another day) !!

which recipe did you use??
All you need to do is cover the tin with foil. It will steam the centre of the cake. Don't fret pet xxx
i have another crazy cake recipe that i use and its for a 20cm tin i can post that if you like??
If you are worried, what I do is half way through when I notice the outsides are cooking and the middle isn't, I then cover it with foil. A trick I learnt from a home economist![]()
i couldn't tell is wasn't cooking the middle until i put a skewer in as the outside looks cooked.
Cake has been in 1hr now and cooking still but is still not totally cooked in middle ... will give it another 5-10mins then pull it out as reckon it will end up being unedible
... Rouge i most likely be making another cake tonight (can't see this one working out) so will pop the foil on half way through !!! (thanks for that Rouge).
1 1/2 cups of plain flour
2 tbs of cocoa
1 tsp each of ginger and cinnamon (i substitute for more cocoa)
1tsp baking powder
1 tsp salt
1 cup sugar
1/2 cup canola oil
3/4 cup water
2 tbs of vinegar
1tsp of vanilla
sift first 5 ingredients, add sugar and stir with fork, measure oil and add it to dry ingredients without stirring, add vinegar and vanilla to measured water and add to flour/oil mixture, stir til smooth
add to pan and cook for 30-40 mins until cake springs back lightly when pressed or skewer comes out clean, leave in pan for 5 mins before turning out, dust with icing sugar when cooled.
i use olive oil because thats all i buy!
oooh i have lots of Olive Oil maybe i will use that
... Olive should i expect a flat looking cake or a high cake (just i heard no-egg cakes can be flat looking) ???? ... and is that 1teaspoon of Cocoa ?? (should i put a heaped spoon ??)

P.S - i have taken the cake out of the oven, turned out wasn't actually burnt like i thought i think it's just not a ' nice ' smelling cake ... it's a high & dense cake which looks appealing but i can't say i like the taste of it but would be OK with choc icing ... but will give Olive's cake a go tonight !!

thanks Olive got ya message ... instead of your 190 i think i will do 180 cause my oven hasn't seen a cake at 190 before... also can get a tad hotter in my oven then most !!

Wow what a day and night, what an ordeal ... i made your cake Olive and the height of it is alright not flat at all but i have to admit i wasn't crazy on the taste as all i could taste was the vinegar but that might be just me cause i'm not use to it ... so i decided to make another one but instead of white vinegar (as i didn't know what vinegar you use) i used apple cider vinegar and also used vegetable oil instead of the virgin olive oil ... well sadly that cake turned out quite flat (far too flat for my likely to take to Kinder in the morn) ... so i have at almost midnight now popped another cake in but made as your original recipe with the vinegar (white vinegar) and virgin olive oil (the 2nd cake i made) ... so with some luck this FOURTH cake in the oven is the one as i'm sooo tired and couldn't bake another cake if i tried.
Hope my DD's day tomorrow is a better one then her Mummy has had today, lol
... Thanks again to ALL who tried to help me make an egg-free cake, think after today it's egg cakes for me, harr harr my heads so tired don't even know how i can laugh or make any sense right now !!
