spinach and ricotta lasagne is good and you can chuck extra veggies in the tomato sauce.
oooh heck, he wouldn't survive here...we have one meat free for every meat night.
Masaman curry based on potatoes and pumpkin
lasagne made with mashed sweet potato and bottled pasta sauce
vegie stirfrys with nuts (left out for the tinies) and rice
soup and bread
fried rice made with grated cauliflower (yes you read right - it's beautiful)

what about cannelloni? There are heaps of nice recipes that don't involve meat. I've made spinach & ricotta cannelloni before and a couple of weeks ago we had pumpkin & ricotta which was really yummy! DD loved it too!
My DH hates vego food too (I only used to eat meat twice a week before we lived together so it was tricky to find some middle ground!) I find curries and other really flavoursome foods are the best way to disguise the lack of meat, now he happily eats whatever I shove in front of him.
Green curry with potatoes, baby corn, zucchini, red capsicum and eggplant (and tofu if you're partial to that?)
Spinach and ricotta triangles (google luke mangan's recipe, it's a little different but very yum!)
Baby spinach, pinenut, sultana and creamy pesto fettuccine
Chickpea and cauliflower soup
Pretty much any curry...you can sub meat for pumpkin and potato or pulses, for stodge and then any other vegies you like

Here you go Kate. This is a basic recipe. I got the idea from Rouge (cos she is a genius) and I just use whatever I've got on hand.
Ingredients
500 grams cauliflower. (I use about 1/2 head for 2 or a full head for all of us)
1 tablespoon olive oil.
2 cloves garlic, crushed
100 g chopped onion
3 rashers Bacon
1 tablespoon soy sauce
2 free range eggs (for egg roll)
Method:
1. Grate the cauliflower, including the core.
2. Break the eggs scramble, fry in pan and form into egg roll, cut into small pieces and set aside.
3. Heat the olive oil in a wok, add garlic, onion and Bacon. Fry until golden colour.
4. Add the cauliflower & soy sauce (add whatever greens you want also)
5. Stir Fry for about 5 - 8 minutes.
6. Add in egg
Except you would leave out the bacon for a meat free option
My DP eats all vegetarian at home because I don't cook meat in the house. So he only eats it when he is out or during the day if he buys lunch - he doesn't seem to miss it at all. Some of our faves are
- Home made veg pizzas
- bean burritos
- red lentil and tomato soup
- eggplant curry
- potato and chickpea curry
- Stir fry noodles or rice
- Moroccan vegetable tagine with cous cous
- Baked potatoes
- Cheesy pasta bake
- Canneloni
- Pasta with kidney bean sauce
- Pumpkin soup with cannelini beans
Vegetarian lasagne yum, just layer with thin slices of any veggies you like!
I make a yummy pasta with artichokes, semi dried tomatoes, olive tapanade, onion, garlic & Parmesan, it's quick easy and really tasty, hubby loves it & he's a meat person.

We don't eat red meat (mammals) at all and only have poultry and fish a few times a week. You might find that he doesn't like the idea of eating vegetarianrather then the actual vego food itself.
I have witnessed so many people declare they "love their meat and could never be a vego" but as soon as the vegetarian platter is brought out at a function they clean it up before DH and i get a sniff
Ok, so think anti-pasta: chargrilled vegies like grilled eggplant and red capsicum. Felafel balls served with hummous dip are always a hit with meat loving blokes. Spanakopita: spinach and feta slice in filo pastry is also always wolfed down. Mushrooms can be quite "meaty" and stuffed ones are both filling and delicious. I'll give it some more thought...
I love vego, until I found out I was preg I hadn't eaten red meat in 6 yrs, it's only now I'm eating it for bubs sake, don't particularly like the taste of red meat!

I decided to be vegetarian 2 years ago. DH only really eats meat now when we go out or for his lunches (tins of tuna). He is pretty good at eating whatever I put in front of him, and he agrees with the environmental/animal rights reasons for being a vegetarian, but at heart he loves his meat and needs his protein (but doesn't eat mushrooms) so some favourites for us are:
spinach & ricotta canneloni, as someone else suggested (I use a weight watchers recipe for eggplant and replace it with spinach)
spanakopita - I either make the elaborate Stephanie Alexander version, or the super easy version (can provide recipe if anyone wants)
lentil & tomato soup (also a WW recipe)
Mexican - burritos, tacos, chilli con carne made from beans and/or tempeh with rice
vegie lasagne, or any pasta really (I love pumpkin and feta)
gnocchi - I have started making my own, not that hard and DH *loves* it
curries - I did a Sri Chimnoy course recently and have some good recipes from that if anyone is interested
roasted veg salads with haloumi
