I haven't had good experience freezing potatoes. They always go all funny when you thaw them out.
So I'm really no help... Sorry.
But, a pea and potato curry? A potato bake?
I'm looking for some things I can cook and freeze for the babymoon days that use potatoes (as we have a stack of them!). I usually bake or chip potatoes as I don't like mash so I'm a little clueless!
I thought of shepherd's pie but I'm not a huge fan. Any other ideas?
We're vegetarian so vegie recipes or ideas that can be converted to vegie would be appreciated![]()

I had a feeling they don't freeze well. I was considering a potato bake... wonder how it would go? I generally don't like potato in curries but pea & potato sounds good.
Maybe potato & leek soup? Does that freeze okay?
Soups, curries, casseroles - basically anything where the pataoe is supposed to be falling to bits and is submerged in liquid is great to freeze.

I still find it goes gross in soups. I'm pretty sur potato bake freezes really well though.
I do pea and potato curry with a tomato-ey sauce. I will make it probably next week and blog the recipe, if you can wait that long?
In the Bolivian high plains, freeze dried potato is a specialty. By freeze dried, they pretty much mean left out in the cold to rot, then stomped to squish out the juices. The product is called chunio, and they make an amazing chunio flour bread, which is kind of halfway between bread and biscuit. They also make an amazing soup called chairo. Delicious. Potato bake usually freezes well, best to heat it in the oven from frozen.
Home made chips are good - you cut and par fry (or boil) them, freeze in a single layer on a tray then when they are frozen just pop them in a snap lock bag.
in fact most things if you heat them in the oven straight from frozen will turn out ok because you won't the effect of the cellular breakdown that occurs in vegetables when they are frozen and thawed.

yeah, I would suggest potato & leek soup too. Potatoes are nasty when frozen and thawed, butmaybe if pureed you wno't notice...?

Really?? I'm so going to try this! Do I boil them chip shaped, or cut after boiling? And if I do that rather than frying should I just toss them on an oiled oven tray to cook later?
Thanks for the ideas. I have a leek so I'll make soup tomorrow and I'll try a couple of potato bakes too. Fingers crossed they aren't all icky!
Yeah, just oil them in a bowl, not too much and whack them in a hot oven (about 200c-220c or so), single layer, bit off salt and paprika![]()
Cut them first, then par boil, won't take long and easier to cut them when they are raw.
You can also cut them into wedges and do them the same way, leave the skin on and season with some paprika and oregano, salt and pepper after you par boil, pop in the bag and freeze.
Let them cool though before you freeze them.

I made a big batch of leek & potato soup and tried some tonight to check how it is after freezing and it was yummy- so, a frozen potato success![]()

Cannellini beans! Great idea. I was planning on adding quinoa but discovered I was all out when I was making the soup so it's protein-less which bugs me.
I have a bunch of pumpkin now and I'm pondering soup or red curry to freeze with that.
