    Anyone have an awesome salmon recipe the kids will love - for tonight?!!

    I am having fresh salmon for my detox so will cook mine separately but I need a simple but yummy idea for the kids.

    I never buy fresh salmon, I never liked tinned salmon so never bought it fresh lol so any good cooking/recipe tips etc would be very much appreciated!!!!

    we just oven bake ours and the girls love it! DD2 had some lemon squeezed over hers last night.
    on MKR last night one group did fish fingers with salmon, though they deep fried them you could try similar and oven bake them, serve with your own chips

    Yep, really delicious and easy.

    Roasted some cubes of sweet potato, capsicum and pumpkin (throw in any other veggies you like.)

    Once they are cooked, break up the salmon and toss around in the pan with olive oil and garlic.

    Cook a little angel hair spaghetti toss it all around and Bob's your uncle. A really delicious dish full of the yummy taste of salmon and roasted veggies.

    I like to wrap the salmon pieces in foil with some lemon juice and herbs then steam it - yum!

    Sooo many things! Fish in a bag is a winner! (We're having it tonight )

    We do an Asian style one, so grab some spinach or bok choi, place on a big sheet of foil. Rub fish in olive oil, crushed garlic and Ginger and marinate for 10 or so mins in a sauce (I do small amounts of oyster, soy, sugar, maybe a bit of rice wine vinegar or Mirin, or saki, whatever you have around, and a bit of chilli). Place on top of spinach. Add a few bits of lenongrass on top of the fish, you can even stud it a bit for extra flavour. Cut some cherry tomatoes in half and add on top, and a small pile of bean sprouts. Add a small wedge of lemon, some spring onion and seal tightly. Bake as you prefer to bake fish (I really have no idea what I do, just throw it in lol!) serve with rice and steamed veg, yum!

    Or you could steam it, then flake it into a yummy frittata.

    Grab some baking paper and foil, lay the backing paper on the foil.

    If you have some baby spinach leaves, put a pile of those in the middle of the paper/foil.

    Cut some cherry/grape/baby roma tomatoes in half.

    Lay the fish filet on the leaves, put the tomatoes on top of it, drizzle it with lemon juice, herbs and some lemon zest (if you have it, I use fresh lemon for this recipe).

    Wrap it up, the baking paper means you don't need to use oil etc.

    I usually put it in the oven at about 200 degrees for approx 10-15 mins.

    Mine love their salmon really simple - steamed or baked with a bit of salt and lemon

    We do ours either coated with a heap of Morrocan spice and then pan fried on fairly high heat til crispy on the outside and still a bit pink in the middle. Mmmm those crunchy bits are SO good or else cook the same with just salt and pepper and then make a sauce of light soy sauce, grated ginger(lots!) and some brown sugar. Boil it up and drizzle over fish and we serve with steamed greens. Mmm.
