    Meatballs!

    Hit me with your best, tried and tested, easiest, yummiest meatball recipe!

    I want something fairly quick and simple and yummo. Can either be a standalone that you do with veggies, or something nice and saucy that you do with pasta or rice or similar.

    How do you do your meatballs??

    Mince, salt, pepper, dash of tomato sauce, dash of wostershire, some dried sage. Mould around a cube of cheese. Absolute perfection. So moist and meaty, and no egg or breadcrumbs required. Just chuck in the fridge for an hour or so before frying (or baking) to let them set.

    I just do mine mince, salt, pepper, egg and breadcrumb. Brown on all sides, then simmer in a tomato sauce. No complaints, just compliments.

    Netix, what sort of tomato sauce? Just like a bolognaise with no meat? Could I use a Dolmio type thing?

    I do the Swedish ones - ala taste.com via Olive! I add extra stock to the sauce at the end and add a lot more thickened cream as well! DEeeeeeelish! We serve with rice. I also grate in zucchini and carrot into the actual meatballs! Mmm!

    Chicken meatballs - chick mince, egg and some coriander. Yummo! Serve with sweet chilli sauce or not. Kids love them. I have oven baked or pan fried.

    Mmmmm we love the Swedish ones! Mushrooms in the sauce is ace too.
    OP the feta dipping sauce is Devine! We had that sat night and used the left over sauce last night with chicken strips

    OP, no meat, but browned chopped onions and garlic, finely chopped carrot, maybe chopped mushrooms, and whatever other vegies you love. Tomato sauce like a jar of Dolmio/raguletto/etc, plus a tin of crushed tomatoes, or (and definitely my preference) a bottle of chunky tomato sauce (since I don't make my own, I find the safeway homebrand in the tall bottles the best, it's not just puree.). Carefully stir in the browned meatballs, cover and simmer gently (stirring occasionally) until the meatballs and vegies are cooked. Serve with pasta/spaghetti. Very easy, and just add herbs if you choose, and a little beef stock powder before it all simmers.

    Olive can you please cut and paste the recipe on here.
    I just can't get meatballs right. I've tried so many recipes and they never measure up to the meatballs my neighbour used to give me many years ago.

    Ohhh yum yum yum, they all sound lovely. I want to go home and start cooking dinner now!

    Going to have to experiment with chicken and lamb mince! Are they both readily available at Coles etc? Or a butcher I assume would be stock them?

    Chicken mince, finely chopped red chilli, finely shredded shallots, crushed garlic, chopped fresh coriander. Sweet chilli sauce for dunking. If I'm doing them for a more special occasion then I also mix in some finely chopped prawns.

    I steam them and they are so incredibly moist and yum. My kids don't eat them (but then my kids don't eat anything so that doesn't count) but everyone else loves them.

    This is our dinner tonight...

    Porcupine meat balls

    420g can concentrated tomato soup
    3-4 grated mushrooms
    1 grated carrot
    1 grated zucchini
    500g beef mince
    1 brown onion, grated
    1/2 cup long-grain rice, rinsed
    2 garlic cloves, crushed
    1/4 cup flat-leaf parsley leaves, finely chopped
    1 3/4 cups of water
    mashed potato, to serve

    Method
    Grate the vegetables and let sit for a while, then squeeze out the moisture in them. (I usually put the juices into the sauce to add flavour!)

    Place soup and 1 3/4 cups cold water in a large saucepan over medium-high heat. Bring to the boil.

    Meanwhile, combine mince, vegetables, rice, garlic and parsley in a large bowl. Season with salt and pepper. Using 1 tablespoonful mixture at a time, roll mixture into balls.

    Add meatballs to boiling soup. Reduce heat to low. Cover and simmer for 40 minutes or until rice tender and meatballs cooked through. Serve with mashed potato.

    yum! i make the pioneer woman's meatballs - mix of beef & pork mince with some garlic, egg, fresh breadcrumbs & parmesan. i love them!

    I use the Donna Hay recipe - it's 2 slices of wholemeal bread soaked in milk for 5 minutes, then torn up and mixed together with 500g mince, garlic, onions,and egg. I also add in some grated carrot and zucchini, grated cheese and some Italian herbs. It's a good recipe to use if you don't have any breadcrumbs. Bake in the oven on 200 for 20 minutes then pour over either a tin of chopped tomatoes or a pasta sauce jar and cook for another 15 minutes, or until sauce is heated through.

    We either have it with pasta or both the boys love it with mashed potato. It's a good way of getting some *hidden* veggies into them as well! It is one of my favourite, easy meals to make. I also sometimes just double the quantaties to make a double batch and freeze half. Great for 'can't be bothered' nights!
