I have several containers of fruit to use up (although not all at once), and I'm after some dessert ideas please. There's the old 'served with ice cream', but nobody here does that, so need to do something with them. And don't have any sponge, so no trifle. Even if I had sponge cake, am after different ideas. Thank you!
I make a "fruit salad slice" with tinned fruit/fruit salad. I mix 2 tablespoons of custard powder with a cup of water, add to fruit and juice and bring to boil on the stove. I line the base of a slice pan with scotch finger biscuits and pour the fruit mix over the top. Refrigerate until set dead easy and yummo. I serve with whipped cream...
Fruit Clafouti. Usually made with cherries, but I have done it with just about every tinned fruit there it.
Super easy and the kids could help make it too. It is just the fruit in a dish, covered with a thick pancake-like batter and baked in the oven.
Some fruit in a bowl and a scoop of icecream always works wonders here too LOL My girls are easy to pelase!
You can do a cobbler, which is a bit like a crumble with fruit on the bottom, but you make a sweet buttery scone-type mixture on top. Jamie Oliver has a good recipe you could google.
Otherwise, i've done chocolate self saucing pudding and bread & butter pudding (with fruit loaf) with canned pears added in. Turned out pretty yummy.
My great aunt used to make a recipe that was basically a non baked lemon cheesecake made as a slice and then topped with peaches and orange jelly. It is amazing Can dig out the recipe if you would like it
This will probably be a bit of experimenting on your behalf to get it just right I usually have extra packets of jelly, base mix etc to make up any shortfalls
Using a deep rectangular slice tin.......
Base;
Standard white wings biscuit base made up to packet instructions, chill until firm.
Cheesecake layer (I find I usually need to double it)
250g block of philly cream cheese
1 400g can condensed milk
1/2 cup real lemon juice + rind of lemons.
bring philly to room temp and beat on low to soften. Gradually add condensed milk while beating to avoid lumps. Once combined slowly pour in juice. Continue beating until you notice the mixture slightly thicken (usually less than a minute). Fold through the lemon rind and spread onto the biscuit base. Gently tap on the bench to even out the surface. Refrigerate until firm
Top;
Make up a packet (or 2 if needed) of jelly (I usually use orange or a tropical flavour) with half the amount of water (this is trial and error too, depends on jelly brand). Let it return to room temp.
Lay peach slices out on top of the cheesecake layer and top with the jelly mix to cover peaches

I make a type of danish. I don't know what you'd actually call it but I get puff pastry and put fruit down the centre then cut lines on the outside of the fruit toward the edge of the pastry - from the middle near the fruit and out to the edge, if that makes sense. Then I overlap the pastry cuts over the fruit left then right all the way to the end. Then I brush with egg and sprinkle with sugar and put in the oven until cooked and golden.
Take tinned fruit halves and place in baking tray on their backs, so the area where the seeds have been cut out of is facing upright. Peaches or pears are best, but other fruit will be fine.
Smash up some chocolate chip cookies in a bowl. Add the mushed-up cookies to the divet in the fruit. So it looks like a single piece of fruit with a crumblish topping.
Add some water to the baking tray - about half a pint/300mls.
