    Gingerbread House

    I'm making a gingerbread house for the first time ever. I've got a mould which I've had for ages but I don't want to just go with the recipe on the back of the box incase it is rubbish. So please can you hit me with your best gingerbread recipes? I don't need gluten free, low calorie, or anything like that. Boytwin is allergic to cows milk proteins but as long as they are in small amounts and cooked into the recipe this isn't an issue so it doesn't have to be dairy free.

    Ingredients

    3/4 cup brown sugar
    3/4 cup golden syrup
    90g butter
    1 tbsp ground ginger
    1 tsp ground cinnamon
    1 tsp fresh, grated ginger
    1 tbsp bicarbonate of soda
    500g plain flour
    pinch of salt
    2 eggs, beaten

    Method

    Combine the sugar, golden syrup, butter, spices and fresh ginger in a heavy-based pan over low heat, and let melt, stirring. Remove from the heat for 2 minutes, and then stir in the bicarbonate of soda until light and fluffy.

    Sift the flour and salt into a large mixing bowl. Make a well in the centre, add the eggs and gradually add the syrup, stirring until all the flour is incorporated and you have a dough.

    Wrap the dough in plastic and chill for an hour.Heat the oven to 180ÂșC and roll out the dough thinly on a floured surface.

    Cut into gingerbread women (or people), stars or rounds, and place on trays lined with baking paper.

    Bake for 10 minutes. Remove from the oven and let cool for 5 minutes before removing from the trays.

    Cool on a wire rack.

    Makes about 25 biscuits, or 12 "people"

    Julia M Usher has a great recipe for "construction Ginger bread" I think the only real difference is that she suggests using bread flour flour as it has more "structure" and the resulting sheets of cookie will hold up better under weight.

    I can't guarantee the piccies will be too awesome but we'll have fun making it. It's going to be a family event with mainly the kids doing the decorating. That said, I let the kids decorate the tree by themselves this year and they did an lovely job. They priorities handmade decorations over store bought ones and I think it looks lovely
