Arcosteel or any other 18/10 grade stainless are good. I forget how the gradings work, but I just looked through my cupboards, and I have some saucepans and a frypan (Arcosteel) my Mum gave me, which are 18/10 and are really good quality.
Also, Bessemer is fabulous (cast aluminium I think). I bought a huge (you could probably put a large pizza in the bottom of it) Bessemer frypan (with just the moulded handles, not detattachable ones) and lid which is taller than the frypan from a garage sale for $5. Unfortunately, new, they are uber expensive, but at least you can pass them on to your children when you go 'cos I think they are that good. We cook heaps in it, I think I use it 9 out of 10 times that I cook, from sauces and stews to pancakes. I think they can go in the oven too, but not sure on that one. They are sometimes advertised on daytime TV, and I think they really are terrific. Out of interest, I'm going to look on ebay now and see what they are worth.
