Im having some friends for dinner tomorrow night and Ill be making mustard coated lamb cutlets. I was going to serve baby roast potatoes as a side but I do that often, so im looking for an alternative (I dont mind if it has potato in it..).

Yummo, I would love the recipe for the lamb cutlets!!!!!
Easy as - no real recipe. I normally throw the required amount of cutlets into an xtra large snap lock bag with a splash of olive oil, soy sauce, garlic gloves, one onion (cut in half), a bay leaf, black pepper, some fresh lemon jucie and a tbsp or 2 of seeded mustard (you can also add some honey if you wish). I let that sit for 12-24 hrs in the fridge, and right before Im ready to throw them on my hotplate I spoon some additional seeded mustard onto one side of the cutlet, pressing down with the back of youra spoon, then cook to your liking. I do about 5 mins on each side and make sure your pan is hot. Mmmm Im getting hungry now..
Roast vege salad - you can make it ahead of time so youcan enjoy your freinds rather than rushing about cooking
INGREDIENTS
1 large sweet potato
2 medium carrots
3 medium potatoes
1 small bunch broccoli
6 mushrooms
2 medium zucchini
3 tablespoons mixed pepitas (pumpkin seeds), sunflower and sesame seeds
Tahini dressing:
2 tablespoons tahini
1 tablespoon low-fat natural yoghurt
2 teaspoons lemon juice
pinch of sea salt
2 teaspoons raw organic honey
METHOD
Preheat oven to 220?C (425?F/Gas 7). Line a baking tray with baking paper.
Wash and peel vegetables (you can leave skins on if using organic vegetables), cut into bite-sized pieces.
Place sweet potato, carrots and potatoes on baking tray.
Lightly spray vegetables with olive oil and bake for 20 minutes.
Add broccoli, mushrooms and zucchini and sprinkle with seeds. Bake for a further 15 minutes, until all vegetables cooked through and golden brown. Transfer to a bowl.
Mix dressing ingredients together in a small jar and shake until well combined.
When vegetables have cooled, gently toss through tahini dressing.
Variations: add grilled chicken, tuna or salmon pieces. Add baked tofu cubes or chickpeas.
Smashed potatoes are fantastic!
1/2 - 3/4 cook jacket potatoes in the microwave. Then take them out and lay them on a baking tray. Using a masher, press down on the jacket potatoes until they 'smash' and are like little patties.
Drizzle some olive oil over them..sprinkle with rock salt...and add a sprig of rosemary on top of each smashed potato.
Then put in the oven and roast them...I normally put them in for around 40 minutes at 180 degrees.
They are a gorgeous mix of crunchy and smooth potatoes...
couscous would be nice - with the roasted vege recipie above![]()
Mmm ladies, great ideas..... Ithink I might try the vege salad as it can be pre made, leaving me just to worry about the lamb Smashed taties, great idea for when Im cooking for all three of us, DD would love them!

I changed my mind and went with the smashed potatoes and they were a hit, nothing left and I made 2kgs!! I think thats my new favourite!
Ohhhh that recipe sounds great! Polenta would have been good too! I'm looking forward to all the winter comfort foods!
