Question Your TOP slow cooker recipe?

Ok, since I'm getting organised and doing my whole budget, things are going to be pretty tight, so I'd like about.. 4 slow cooker meals for the fortnight (I'll just keep repeating them I don't care, as long as they are cheap to make - oh and easy cos I'm a crap cook).

So yes - hit me with your BEST recipes - tried and tested.

Oh - and no mushrooms please - or ones that contain cream.

    Cheers!

Sweet thread Mel! I need some inspiration also! (oh and cheap!!) and yes I am a crap cook too! LOL

I make Apricot chicken in mine all the time:

1 x coles BBQ chicken - all meat taken off the bones..

    1 x can apricot nectare

1 x sachet chicken noodle soup

Put all ingrediance in slow cooker and mix together - I usually have on low most of day so that the chicken soaks up all the juices..

    Add some water if needed!

Searve with rice - DH doesnt eat it so I make a big pot and Bella and I have it for tea / lunch then I freeze what I dont eat!

I also make my spag boll in the SC.

    500 gs mince
    1 large onion

Brown mince and onion and put in SC'er.
Add 2 x cans condensed tom soup
    1 tsp wosterhire sauce
    minced garlic
    tabasco sauce
    2 x tbs sweet sherry

Cook slowly for about 2-3 hrs - If you have all day you dont even have to brown the mince - it cooks in the cooker.

Easy Peasy Aussie Chilli Con Carne

    1 tin refried beans
    1 tin 4 beans
    1kg kangaroo mince (or normal)
    2 tins crushed tomato
    1 diced onion
1 diced capsicum (and any other vegies you feel like)
    red wine to taste
garlic to taste (I put in at least 3 cloves)
Chilli to taste (I put sweet chilli in - the kids don't mind that)

cook mince in frying pan with onion til brown, add refried beans til soft then put everything into the slow cooker & mix

Cook on low for about 8 hours stirring every few hours

DH loves this recipie and it makes HEAPS! Great on rice, pasta, mashed potato, with vegies or in sandwiches the next day.

    moroccan lamb shanks!

brown shanks in frying pan, add to slow cooker.

slice 2 medium-large onions, brown in frying pan with a little olive oil. Add a tin of chopped tomatoes and a tablespoon of moroccan seasoning (available in multiple brands in the supermarket spice aisle!), add half a can of water, bring to boil, pour over lamb shanks.

leave cooking all day long. Add a can of chick peas and a bunch of baby spinach about half an hour before serving. You can leave the spinach until right before serving if you don't want it quite so wilted. Serve with rice.

Too easy, amazingly tasty! And shanks are cheap =)

Get some big pieces of Gravy Beef, add Passatta and whatever Mexican inspired flavours you like, even some tobasco if you like. (I make a taco seasoning so I'll add that) And then cook it down and at the end of the day check for spice and taste and then fork the beef and use in flour tortillas YUMMO!

    Basic basic basic...
Chicken pieces (skinless but on the bone if you can), water, dried herbs you like, can of diced tomatoes and vegies (Carrots, celery, leek, onion, can of corn, peas, parsnip...)

Easy as. You can add risoni, pasta or potatoes to it if you like too, or just serve it on mash.

Works for almost anything, and I rarely use any sort of "stock" - the chicken and water will make its own. But you can add a cube or I prefer Vegeta

Chuck it all in (you can brown the meat in the fry pan first) and just enough water to JUST cover the rest, and turn it on about 5 hours on low - Melly Proof! lol

I dunno if the kiddies will like this...mine didnt, but mine are boring eaters.... I made DH try it (another boring pallete...) and he loved it.

I dont eat meat, so all vege here.

    Lentil and Vege Rogan Josh....

1 sweet potato, peeled and chopped
    1 cup frozen peas
3 small potatoes/1 large potato, peeled and chopped
    1 onion chopped
    1 can lentils, drained
1 jar rogan josh simmer sauce (you didn't think I actually made it from scratch did you??)
1 jar water (gives you a nice sauce)
1 Tbsp sugar (optional but mine needed it)

Just pop it all in the slow cooker, stir, and I cooked on high for 4 hours and then low for another hour serve with basmati rice...i had mine with heaps of natural yoghurt dolloped on top....

Mel I am the same as you and not the best cook out and I found a cookbook for slow cookers on ebay. It's called 365 easy slow cooker recipes and it cost me around $10 and it is really simple. It has all different recipes from entrees, soups, mains, desserts.
Also have you checked out the slow cooker recipe thread that have pages and pages of recipes. I've browsed through there and some seem really easy.
I'm doing the same as you and trying to use my s/c but so far I've used it three times and stuffed all three meals. I'm obviously doing something wrong.
Let us know any good easy recipes you find.
