    Pumpkin soup recipe for a slow cooker

    Anyone got a great pumpkin soup recipe for a slow cooker?

    I'm keen to give it a go. I might also whip up some dough in the breadmaker and home bake bread rolls to go along with it. Looking forward to a cosy dinner with the log fire burning in the background...

    Definitely feeling like winter at our house!

    Ok, this is from my AWW Slow Cooker recipe book. It's delish!

    30g butter
    1 tablespoon olive oil
    1 large leek (500g), sliced thinly
    1.8kg piece pumpkin, chopped coarsely
    1 large potato (300g), chopped coarsely
    3 cups (750ml) chicken stock
    3 cups (750ml) water
    1/2 cup (125ml) pouring cream
    1 tablespoon finely chopped fresh chives

    1. Heat butter and oil in large frying pan; cook leek, stirring, until soft.
    2. Combine leek, pumpkin, potato, stock, and the water in 4.5 litre slow cooker. Cook, covered, on low, 6 hours.
    3. Cool soup 10 minutes. Blend or process soup in small batches, until smooth. Return soup to cooker. Cook, covered, on high, about 20 minutes or until hot. Stir in 1/3 cup cream. Season to taste.
    4. Serve soup topped with remaining cream and chives.

    Define 'pouring cream'. The rest I'm good - thanks Eluned!

    This is next week's 'slow cooker day' meal for sure.

    pouring cream is just regular old thickened cream. You could use any pumpkin soup recipe in a slow cooker, just whack everything in!

    Thanks hun. Do you think you could make a tropical version with coconut cream? I'm still awfully impressed with your new kitchen appliance.

    Yep roasting the pumpkin first gives it a really delicious flavour and butternut pumpkin is the best type to use

    Awesome, I was just coming in to ask the same thing!! Do you need to whizz it at the end though or does it break down enough on its own? I don't have a food processor or blender atm.

    Yep Jen, i have recently made one with fresh coconut milk, ginger, onions, garlic and a few other bits and bobs, it was sensational!

    Long time in answering huh Willow I tend to wizz mine with a stick blender, just coz I don't like lumps. I would recommend wizzing it, coz the way mine turns out it's too watery to be a chunky soup, but too chunky to be a true liquid soup - not that that makes any sense
