Anyone got a great pumpkin soup recipe for a slow cooker?
I'm keen to give it a go. I might also whip up some dough in the breadmaker and home bake bread rolls to go along with it. Looking forward to a cosy dinner with the log fire burning in the background...
1. Heat butter and oil in large frying pan; cook leek, stirring, until soft.
2. Combine leek, pumpkin, potato, stock, and the water in 4.5 litre slow cooker. Cook, covered, on low, 6 hours.
3. Cool soup 10 minutes. Blend or process soup in small batches, until smooth. Return soup to cooker. Cook, covered, on high, about 20 minutes or until hot. Stir in 1/3 cup cream. Season to taste.
4. Serve soup topped with remaining cream and chives.
Awesome, I was just coming in to ask the same thing!! Do you need to whizz it at the end though or does it break down enough on its own? I don't have a food processor or blender atm.

Long time in answering huh Willow I tend to wizz mine with a stick blender, just coz I don't like lumps. I would recommend wizzing it, coz the way mine turns out it's too watery to be a chunky soup, but too chunky to be a true liquid soup - not that that makes any sense
