Hi Chick
I do a lot of chicken and veg here.
I cheat by using premade stock, boil up chicken breast (tease it apart later with a fork), a carrot, zucchini, celery, barley, peeled and cubed potato and pasta stars, mixed herbs and a bay leaf. Always turns out yummy and the pasta really thickens it up.
You could look up a recipe for pea and ham?

1 ham hock
1 onion
1 carrot
1 turnip
1 parsnip
1 potatoe
1 leek
2 sticks of celery
1 sweet potato
pumpkin
vegi stock powder or bacon cubes if you can find them
Dry soup mix (lentils, split peas, barly)
Chop all vegies
Put in pan with ham hock and water to cover all and a bit above.
Bring to Boil
Simmer for 4 hrs stirring frequently to stop barley sticking to pan
Remove ham hock
chop off meat
add back to soup
Can liquidise for smooth soup or leave chunky
Salt and pepper to taste
Serve with yummy bread!!! I love turkish bread
