Does any one have a good banana cake/bread recipe?. I am not much of a cook (i do try though LOL) and I am sure banana cake/bread is a really simple recipe but i need a bit of guidance.

    TIA

I have got a fantastic banana bread recipe that is really easy and so yummy - i made it again this week! Need to go to my bub, but will come back and post it for you when I get time.

Also have a delicious, but slighty more time-consuming cake recipe if you would like it.

    Banana Bread

    1&3/4 cups of SR flour
    1/4 cup of Plain flour
    1 tsp ground cinnamon
2/3 cup, firmly packed, brown sugar
    1/2 cup skim milk
    2 eggs, lightly whisked
    50g butter, melted, cooled
    2 overripe medium bananas, mashed

Preheat oven to 180C. Grease a loaf tin and line the base and two opposite long sides with baking paper. Sift flours and cinnamon into a bowl, stir in sugar, make a well in the centre. Combine milk, egg, butter and banana in a bowl, then add to the flour mixture and sitr until just combined. Pour into tin and bake for 40-50 minutes, check with a skewer if you like. I prefer this to be slightly underdone rather than overdone IYKWIM? Let cool in tin for a few minutes before cooling on a wire rack. It's very yummy still warm from the oven!

I love this recipe, it is so yummy! It's very nice with a little butter spread on one side.........

So glad you like it! Apparently it's not too fattening which is always a good thing!

Dachlostar linked to this the other day so I thought I'd try it. We had a flop the first time, the edges were cooked but the middle gooey (the cooked parts were delish though!) so I have another one cooking now

My Mum makes an amazing banana bread using either yoghurt or sour cream...I can't remember which.

I'll call her today at a more reasonable hour and post it on here. I totally agree with the butter thing, too. Banana bread, still warm from the oven, and a smear of butter. Heaven
