    Birthday Cakes recipes

    Hey guys,

    I'm looking for a basic cake recipe for a birthday cake. It is going to be the shape of a lego brick, and my friend who did a cake decorating course is coming over to put fondant on etc, I just have the make the basic cake.

    I was thinking 1 layer vanilla, and 1 layer chocolate, with something in between to make them stick like Jam.

    What is a nice tasty cake recipe to use? I want something a bit tastier than usual, but probably not too heavy or full on as it is for 5 year old boys, but I don't want to go to all the effort for them to take 1 bite either.

    Also, if I make it Tuesday night (tonight) or Wed morning, for my friend to ice Wed evening, for a Thursday afternoon party, what is the best way to store it? Airtight container? Fridge? Freezer?

    for the vanilla layer, google kitchen aid and use the perfect vanilla cupcake receipe - devine! I've kept it for 4 days in air tight container. Not sure about chocolate one that is a bit different though

    I have a lovely chocolate cake that I use that has jam in it and tastes devine, but I will have to get it to you later today if that is ok.

    Family Circle Best Ever Chocolate Cake

    125g (4oz) butter
    1/2 cup (125g) caster sugar
    1/3 cup (40g) icing sugar sifted
    2 eggs
    1 teaspoon vanilla essence
    1/4 cup (80g) blackberry jam
    1 1/4 cups (155g) self raising flour
    1/2 cup (60g) cocoa powder
    1 teaspoon bicarb soda
    1 cup milk

    1. preheat oven 180 degrees (moderate) grease 20cm 8 inch square cake tin with baking paper
    2. Beat butter caster sugar and icing sugar with an electric mixer in a small bowl until mixture is light and creamy. Add eggs gradually beat thotoughly between each addition. Add vanilla and jam and beat until combined.
    3. Transfer mixture to a large mixing bowl. Using a metal spoon fold in the combined sifted flour, cocoa and bicarb alternately with the milk. Stir until the mixture is just combined and almost smooth.
    4. Pour into the tin and smooth the surface. Bake 45minutes. Leave cake in tin for 15 minutes before turning out on a wire rack.
