    cupcake recipe

    So Im attemting Elmo cupcakes for DD2 birthday and I want a fantastic cupcake recipe...not chocolate, something different? I know the kids only eat off the icing anyways but I want a great tasting cake not just a vehicle for icing

    I already have the famous Netix's red velvet cake that Im using for her main cake so If anyone has a fav recipe please share or point me in the right direction TIA xx

    I use one off Taste

    Classic Cupcakes

    • 2 cups SR Flour sifted
    • 3/4 cup caster sugar
    • 125g butter, melted,cooled
    • 2 x 59g eggs, beaten
    • 1 teaspoon Queen Natural Vanilla Essence


    1. Preheat oven to 200 deg. Grease a 12 x 1/3 cu capacity muffin pan. I line this with paper cases rather than grease. Combine flour and caster sugar in a bowl. Make a well in the centre.
    2. Add Milk, butter, eggs and vanilla to flour mixture. Using a large metal spoon, stir gently to combine.
    3. Spoon mixure into prepared muffin pan. Bake for 12-15mins, or until skewer inserted into the centre comes out clean. Stand in pan for 5mins before transferring to a wire rack to cool.


    I and the kids love this recipe, so basic and so nice Sometimes I add choc chips to the mixture as well. Usually whatever looks about right.

    ETA: I buy the Lighthouse cake and biscuit SR Flour as it seems to make a more smoother mixture if that makes sense.

    Nigella Lawson's cupcake recipe from her how to be a domestic goddess book is the best ever IMO! I'm not home atm so can't post it but google it maybe in the meantime. You can make them 2ways. One is in the food processor (easiest) or the other using traditional sponge method which, while fiddly, produces a better result. Mind you the good processor ones are pretty awesome. I have gotten very good feedback about my cupcakes even when once I stuffed up and used double the amount of butter .... Still delish. Will post when I get home.

    The nigella ones are very good, VERY buttery but very yum. I have the recipe written down, but don't have my recipe folder. you could maybe Google it. I also like the one from here originally, just called yummy cupcakes or something. I can't remember who posted it originally. I will have a look online for both recipes in the morning if i can. You chose my cupcakes! Awes! I feel special!

    I use the recipe for Crabapple's vanilla cupcakes. I'm sure you could find it on google. They're delicious.

    I made the vanilla ones off the kitchen aid website yesterday and they are awesome! Super easy to make too...

    i've used the crabapple bakery cupcake recipe as well - delicious! there was a thread on here a while ago & someone posted the recipe. i'll have a look for the thread

    thanks ladies Ive just made the crabapple bakery ones for a trial if the taste of the mixture is anything to go on they are going to be yummmm!

    yum, yum, yum what you are making sounds great. I haven't tried these or even have a recipe but a friend was telling me that they made rose cupcakes with musk icing. If you google it lots of recipes come up

    A little bump. I have my recipe folder now, if anyone wants me to post the Nigella ones and the other 'yummy cupcakes' in the recipe sticky.
